If the steel is carbon steel it actually can rust, but by taking care of it it will develop a patina that would protect it even more from rust

Non è sabbia ma cenere, serve a far raffreddare lentamente l'acciaio per normalizzarlo e ammorbidirlo dopo la forgiatura, così da rilasciare lo stress della forgiatura ed evitare che si pieghi o spezzi con l'indurimento

On such wide blades I find I better to quench the whole blade in the oil because when you make edge quench wharp.

I think that for this knife i had a bad warp mostly because i didn't normalize the blade well enough, I've seen a lot pf expert knifemakers to heat up only the edge to avoid cracks and warps. This blade was heavily forged so it was full of stress, i should have done more normalization

05:45 What is the purpose of "quenching" in the bucket of ash? (I know it's not a real quench). Is there a benefit to this, opposed to air cool? Does the carbon in the ash do something magical? I am just barely considering how to begin to learn this trade.

If you heat the steel up and cool it down really slow it will anneal it (make it softer). It makes filing and grinding much easier. I'm not sure what he was using but vermiculite works really good for this and its super cheap.

Just a suggestion but you may want to shorten the length of the handle on your sledge hammer, if its going to be a striking hammer you want it so you can move around the anvil easily and not hit yourself in the stomach with the end of the handle all the time, if you measure from your armpit to your finger tips that is about the length of handle you want below the head. It'll make it a whole lot more comfortable to swing. Nice cleaver though!

that is a classic japanese style of forging...you only pretty up the actual area that needs to be sharpened. the rest stays forge worked and shows the character of the artisan.

The epoxy can't hold the blade in place forever. There's no telling when the epoxy will give out. I think it's better to have a pin hold the blade onto the handle so it won't fall off the handle unexpectedly.
