For the leg spinner I would have a Short third man Cow corner Long on Long off Square leg Backward point Leg slip Deep mid wicket Bowl around the wicket (right hand) Outside leg stump and across the batsman

Leg slip? That too for a leg spinner? Cow corner yes but if he is getting to spin then it's really not necessary but still a good option. But I would prefer a man inside the circle to cut that single.

I bowl with a leg spinner over the wicket. Mid wicket 3rd Man Gully Point Cover Long On Deep Cover Deep Fineleg Mid Off

First I would aim to bowl at the new batsman more especially with the leg spinner For the set batsman when the medium pace is blowing I would set a field like Square leg Deep fine leg Long on Mid off Cover First slip Point Short third man Cow corner And bowl into the body (especially if the wind is going across the ground and the batsman in going to hit into the wind) Have the bowl bowl a good length over mid stump

I would take that first slip out and put it to gully instead or most likely a widish gully.
