Check how sharp your knife is - blunt knives tend to release more of the onion juice because they crush more cells to release the stuff. Could also just be a different variety of yellow onion, but the knife thing makes sense with the move.

Definitely blunt knife. The fact she need so much pressure to cut the onion and has to saw though the pepper already says the knife is blunt and squeezing the onion juices when cutting. Thats a Sakai Takayuki Damascus thata a 150 + dollar knife. Please show it some love and get it sharpend and learn some proper knife holding technics it's better for your wrist if you cut a lot.
