This looks divine Geoff... I live in Canada and hardly ever see Seville oranges... can I use regular oranges?... and maybe limit the sugar?... would that work do you think?... Love your website, thanks so much... 🇨🇦

HI Carol, Thanks very much. Seville oranges are only available for a few weeks each year, in supermarkets. They are available frozen too, in some places or online. You can use other oranges, and they will work well, but with a slightly different flavour profile probably. The amount of sugar is quite important, it is what not only sweetens but also preserves the marmalade. Personally I wouldn't try to reduce the amount of sugar, simply because the amount or marmalade eaten at one time isn't very much. Checking a few proprietary brands of marmalade indicates that 15g of marmalade contains about 8 g of sugar. I weighed a well heaped teaspoon of mine and it weighed 14 g.

Very nice! I have made many Jams and preserves and I love your technique... Oh and I did make the Steak and mushroom pie for dinner this evening... very rich! and was great with a salad... It was a winner! Thank you! I will try this Marmalade as it is one of my favorite treats for sure!

HI Julie-Joy. I am glad you enjoyed the Steak & Mushroom Pie. The marmalade is easy to make. The season for Seville oranges, which are definitely the best for marmalade, is just about finished. But any oranges will work quite well.

Hello Geoff, that looks delicious, really interesting watching you make it with great instructions as always, thank you. Wish I had a big pot and temperature probe, might have to invest?? I've never made conserves before, looks like a bit of a work out but so rewarding and lovely to have homemade marmalade on toast and a cuppa tea. I miss going to fetes etc and buying homemade jams and marmalade, fingers crossed we'll all be able to enjoy them again one day soon. Thanks again, stay safe, take care. Janet ☺

HI Janet. Thanks very much. It is very rewarding to make jams and marmalades, and they are so delicious too. They are also good to give as gifts, when that it possible. Hopefully, as you say, it wont be too long before we are all able to get out and about and buy such things from various fetes and markets. I hope you keep safe and well.

Hi Fi. I just checked the video and the blog post, they seem to be the same. 1 kg(2.2lbs) of oranges and 2kg(10 cups, or 4.4lbs) of sugar.

Hi Geoff, Can you clarify recipe please. You said 2K oranges and 2 K sugar, however I followed link to recipe where it says 1 K oranges to 2 K sugar . You also said 2 kg is 2.2 pounds but this should be 4.8 lbs I think? Regards Susan in Melbourne ( Sevilles now in season in Australia!)

Hi Susan. It seems I was having a bad day LOL. In fact it should be 1kg of oranges, which is 2.2lbs and 2kg(4.4lbs) of sugar. So the written recipe is correct. I have put a note below the video to explain that it is actually 1kg of oranges. I hope you enjoy your marmalade, if you make it.

@@geoffsbakingblog Thanks Geoff, there is so much variation I have heard thet equal quantities of Fruit and sugar the secret! The quantity of oranges in video looked like 2K to me so sis as you said. Oh Well cooking away so fingers crossed!

I wonder how bitter does it get? - I made this now and them with a similar orange we have here in south-east Brazil from late May trough half July (also depending on altitude and how early cold evenings set in in the year). It is the same hybrid species (Citrus*aurantium) although not the exact cultivar of Spain but it tastes similar with variable degrees of bitterness. So, I usual leave the empty outer skin halves in water for 24 hours changing water at least 2 times before simmering. I'm tempted do do it straight away but the bitterness might be quite noticeable.

Hi JB. I don't know of the cultivar that you have available. But with the Seville Oranges the bitterness is the attraction of the marmalade. It makes a lovely sweet marmalade with a tang of slight bitterness in the zest. I think that the ones you have will probably work without any soaking.

Hi Paula. I made about 2.8kg of marmlade, so 7 400g jars. I used jars which were larger so only needed 5.

Hi Paula. Seville oranges only seem to be available for a few weeks at the beginning of the year. I did a quick search and found this comment on one site: Biocoop or Grand Frais or La Vie Claire. Ask for oranges amères.

HI Shaun. I got mine for Ocado. I just checked the Waitrose website and they have them too it seems. There is also a website that sells frozen Seville Oranges all year round.
