Question, can you add the double stick tape to the “top” seam to stick it to the sidewall so it would be easier to keep in place before adding the foam inside the cover? Would it work without eventually discoloring the leather/ vinyl?

Yes, that could be done, but you would still have to sew it down. The seamstick will not hold it down hard enough when it comes time to stuff the foam inside.
