🟢食材:
牛肉 300 克
青椒 300 克
豆豉 15 克
蒜頭 2 粒
薑 3 片
蔥 適量
🟢調味料:
紹興酒 1 湯匙
生抽 2 茶匙
糖 1 茶匙
食油 2 茶匙
鹽、澱粉水、芝麻油 適量
🟢做法:
1️⃣ 牛肉洗淨切片,加入生抽、糖、澱粉水、食油拌勻放雪櫃醃半小時。
2️⃣ 青椒洗淨去籽切段,豆豉洗淨略為切碎備用。
3️⃣ 熱鍋下油,煎牛肉約 1 分鐘至八、九成熟盛出備用。
4️⃣ 爆香蒜頭、薑片、和豆豉,下青椒爆炒,下適量鹽,灒入紹興酒蓋鍋蓋 10 秒。
5️⃣ 放回牛肉翻炒均勻,勾薄芡,加少許芝麻油及蔥段上碟。
🟢Ingredients:
Beef - 300g
Green peppers - 300g
Fermented black beans - 15g
Garlic - 2 cloves
Ginger - 3 slices
Spring onions - as needed
🟢Seasoning:
Shaoxing wine - 1 tablespoon
Light soy sauce - 2 teaspoons
Sugar - 1 teaspoon
Cooking oil - 2 teaspoons
Salt, cornstarch slurry, sesame oil - as needed
🟢Cooking Directions:
1️⃣ Wash and slice the beef, marinate with soy sauce, sugar, starch water, and cooking oil for half an hour in the refrigerator.
2️⃣ Wash and deseed the green peppers, chop the fermented black beans, and set aside.
3️⃣ Heat the wok with cooking oil, stir-fry the beef for about 1 minute until it's about 80-90% cooked, and set it aside.
4️⃣ Stir-fry the garlic, ginger, and fermented black beans until fragrant, add the green peppers and stir-fry, season with salt, sprinkle Shaoxing wine, and cover the wok for 10 seconds.
5️⃣ Return the beef to the wok, stir-fry evenly, thicken the sauce with starch water, add some sesame oil and spring onions, and serve.
