Kerala Veg Stew 🧺 INGREDIENTS Coconut Oil (വെളിച്ചെണ്ണ) - 3 Tablespoons Cardamom (ഏലക്ക) - 4 Nos Clove (ഗ്രാമ്പൂ) - 6 Nos Cinnamon Stick (കറുവപ്പട്ട) - 3 Inch Piece Ginger (ഇഞ്ചി) - 1 Inch Piece Green Chilli (പച്ചമുളക്) - 3 to 4 Nos Onion (സവോള) - 1 No Curry Leaves (കറിവേപ്പില) - 2 Sprigs Salt (ഉപ്പ്) - 1¼ Teaspoon or to taste Potato (ഉരുളക്കിഴങ്ങ്) - ½ Cup Carrot (കാരറ്റ്) - ½ Cup Green Beans (ബീൻസ്) - ¼ Cup Cauliflower (കോളിഫ്ലവർ) - ½ Cup (Optional) Water (വെള്ളം) - 1½ Cup (375 ml) Thick Coconut Milk (കട്ടി കൂടിയ തേങ്ങാപ്പാൽ / ഒന്നാം പാൽ) - 1 Cup (250 ml) Crushed Black Pepper (ചതച്ച കുരുമുളക്) - ¾ Teaspoon Cashew Nut (കശുവണ്ടി) - 10 Nos (Optional) optional ingredients asafoetida powder tarragon, galangal, and urad al beans step 1. heat coconut oil and cinnamon stick, cloves, cardamon, over medium heat stir until blanched 3-6 mins. Step 2 add ginger, green chili, onion, curry leaves salt stir until sauteed. Step 3. add potatoes, carrot, beans, cauliflower stir until cooked. Step 4. add water boil covered for 15 mins or until veg is transparent. Step 5. add coconut milk, black pepper cashew nut paste simmer and stir 10-20 mins until flavours are combined take off of heat and serve.
