Recipe & Ingredients
Korma Masala:
-1 TSP Coriander Seeds
-1 Nutmeg Piece
-1 Mace Piece
-1/2 TSP Black Pepper Corns
-7-8 Green Cardamom
-2 Bay Leaves
-4-5 Black Cardamom
-8-10 Cloves
-1 TSP Zeera
-3 Star Anise
-2 Cinnamon Sticks
Dahi Masala:
-750 gram Yogurt
-2 TSP Coriander Powder
-2 TSP Red Chili powder
-2 TSP Salt
-1 TSP Turmeric
-1-1/2 TSP Kashmiri Red Chili
add all spices in yogurt and keep aside.
In a pan add all the Korma Masala spices and roast them for 3-4 minutes. After that let them cool and make its powder and keep aside.
In a cooker add 200 gram ghee, 4 bay leaves, 5-6 green cardamom, 3 black cardamom, 7-8 cloves and 2 cinnamon sticks. Cook them for a minute and add 1/2 kg sliced onions and let them brown.
Once onions are brown add 2 kg mutton and cook for 10-15 minutes. After that we will add 150 grams ginger/garlic paste and further cook for 10-15 minutes. After that we will add the dahi masala we made earlier. After adding yogurt masala we will cook further for 20 minutes.
After that we will add 1 cup milk and 1/4 tsp saffron and again cook it for 10-15 minutes. Then we will add 1.75 liters of water and cook it on pressure for 20 minutes. Once cooked on pressure we will add few drops of Kewra and 1 TSP of korma masala that we made earlier.
Garnish it with some almonds and our authentic shahi korma is ready to be served!
