paulie brought the noodles, he was doing a weeks in detention and he had a very good system for making them last, he would crush the noodles into moderate size chunk. not too big where it'll be gone too quickly but not too small where it's hard to grab. it's a very good system.

Binging with Babish tested the cutting the garlic with a razor blade thing and it turned out to be a myth. Garlic is solid vegetable matter, it never "liquifies". The thinnest possible slices he could make with a fresh razor blade still ended up as visible, thin sheets of fried garlic - not a hindrance, but not what the myth claims. The best you can do is use a garlic press and put it in there as a paste, which will form a homogeneous mix with the oil in the pan and (later) with the tomato paste.

I gotta say though, having fresh bread, pasta with meat (veal, pork, beef, onion, garlic, tomato) sauce, steak and lobster, minus the wine (I'll take water), that would DEFINITELY put me away/I would be sleeping like a baby after that feast... (But yeah, I noticed that they really didn't bother with green veggies, salads, even fruit, etc. :-D ) Of course, today I've had 3 amazingly tasty oranges, a banana, oven roasted turkey backs and skinless dark organic chicken thighs with organic teriyaki sauce, some organic spinach and peas, sour cream and onion potato chips, lots of water and supplements. So yeah, I'm feeling pretty content/full at the moment. But I could handle some buttered lobster... :-D (No steak at the moment...)

My (step) grandpa was an italian from Brooklyn, and it was always amazing when we'd eat at his house. He was also a really cool guy, his name was Vito and he had a similar voice to Brando's Vito, raspy and everything. He was very similar to the "typical" italian mobsters portrayed in movies, but without most of the bad stuff- he didn't disparage people for being different, never heard him say anything racist. So it was all of the cool mobster stuff without any of the murder and general "bad" stuff that we saw from mobsters in the movies.

For about a five month period before being transferred to another facility, me and my crew would eat better than the rest, and spend all day playing cards, drinking alcohol and smoking weed til the point of falling asleep.

I thought Italians condemn processed food. Here's my system for tomato sauce: take 2,5-3 pounds of ripe tomatos, peel them. Now take 3 big onions and cut it in little cubes. Chop 4-5 heads of garlic. For a flavor, I always put some dill and basilic. Red wine would never do no harm by the way. Mix it all with 3 spoons of vinegar and 5 spoons of olive oil, hot peppers and pinch of salt. Fill in 3 cups of hot water. Leave it all on low heat for 1 hour.

As an Italian I love the way Ray said salame, prosciutto...:"Salami, prociutto"... Ray gave an absolutely amazing performance. As an actor and as narrative. Of course I know who he was but, in a way, I discovered how great was recently. I was very into Ray Liotta when I heard the news and I was schocked. Great actor, he always held the scene with absolutely mastery. And great man in his own right.

Scorsese definitely worked the dialog to get that in. Actual conversation with my aunt: -- Aunt: You want a sangwich? -- Me: I love the way you say sangwich. -- Aunt: What? I don't say it that way... @@MensaGiraffe My great uncle who was born in the 20s used to say it that way. "Sangwich" was more of a Brooklyn-Queens dialect amongst the italian american people back then. Paulie was based off of Paul Vario who was born in 1914 so you gotta figure he was from that generation that said "sangwich".

One of the things that is totally lost today is good dialogue. This sounds like a real group of wiseguys having a natural conversation among each other. Liotta doing the narration even makes mistakes. Because that's what people do when they speak. Dialogue these days is way too snappy and witty. Every reply is immediate, and perfect. There's no stuttering or slurring. There's no pauses or verbal crutches. The tv show House is a perfect example. Everything is spot on, robotic, and makes it easy to spot bad acting. Because it all is. Makes me wanna stab my ears. And my eyes.

@Mike Goodwalk living in New England, the lobster capital of the world, lobsters are and were in fact cheap. Distance plays a factor but this movie is in New York, which also catches a lot of lobsters. In many cases, lobster is cheaper than beef around me, and not by an insignificant amount per pound.

My great grandad was a fisherman, my nana grew up eating seafood for every meal. She said it was always funny how they'd eat the same catch of lobster that was destined for upper class restaurants in Edinburgh or London, but she'd have killed for some chicken, lamb, pork or mutton. Mind she's 93 and her brother and sister are in their late 80s, so there's something to be said for the seafood diet.

Thats not why he called him an aristocrat.. he said that because the rarer you have a steak, the better you can taste the quality of the meat, and that doesn't mean shit when you're locked up. Instead of having his steak cooked well-done like the rest of the wiseguys, he wanted a rarer steak like a little fancyboy.

The garlic scene is actually one of my favourites. Its really a beautiful way of preparing it. Similar to onions. You want to slice or dice them so thin, they melt into the olive oil. The flavour is incredible.
