My short ribs is about 1/2 of the size so I cook at 275F ( from past experience with my convection oven, I always need to lower the temperature by 25F) for 1hr and 30 minutes ( total time, internal temperature is 180F with the cover method). It tastes good but the meat is not very tender and hard to come off from the bone. Anybody know I need to cook longer or higher temperature or both? Any suggestions is greatly appreciated.

I like BBQ ribs which is baked for 4-6 hours and brushed the source 4-5 times, really nice.
