As someone who is fairly new to sharpening and interested in the Edge Pro systems, your sharpening videos are by far the easiest to understand and the most comprehensive and relevant that I have watched. And I've watched a lot of them, believe me!! Just a shame there's not more of them. I could watch these all day. Excellent.👌

Eric, yes I'm excited to start making more videos. My problem is that although the videos are getting a little better, I'm not getting any faster at making them. A 12 minute video takes me about 12 hours to make, maybe more. And I do all the editing at home in the evenings. I don't know how some people are able to make really high quality videos on a daily basis. I guess it all comes down to lots and lots of practice.

@@EdgePro A few things here. The people that make daily videos: May have better video equipment. Making videos is what they do, they are not also running a successful knife sharpening business and making videos. Videos ARE their business. That's all they do and have 24 hours a day, seven days a week to do only that. No family, no other business to run, no kids, and no other obligations. In other words, they don't have a life outside of making those daily videos. They live, breed, an sleep those videos. Under those sorts of circumstances it's only normal they would be very good at that one thing they do. They may have others helping them. We all like you Cody and you are doing good. Please don't over extend yourself and cause the great quality we've come to expect from Edge Pro suffer.

The matrix stones are pretty awesome. I got the 250, 650 and 1100 grit ones. They cut pretty fast without much pressure and you can easily finish on the 1100 already which leaves a pretty polished finish with quite some bite.
@valebliz

Agreed. I own the standard diamond fine and UF stones, and the matrix 650 and 1100. Great stones and after the 1100 imho diamond compounds stropping gives very good results. 4 micron, 1 micron and 0.5 micron progression.

I've owned the Apex for going on 7 years. It's fun to straighten/center factory grinds and I haven't had much trouble at all with different style knives. One thing I have found a bit challenging recently is matching the angle on scandi grind knives like my Mora and GEC Farm & Field. The grind face is so thin, even when using a permanent marker it can be hard to see. Love these vids. Keep them coming.

Thanks for watching Travis. I've found that sharpening in an area with good lighting can be very helpful. When I was sharpening commercially there were a couple restaurants that the lighting was terrible and it made it difficult to see what was happening at the edge. So I started bringing a head lamp with me and it really made a difference. Not sure if that would be helpful in your situation or not but you might give it a try.

Great video, Cody. If I can suggest one test I use for sharpness, get some phone book paper and curl it into a loose cylinder. If you can cut into the rounded surface of the paper without supporting it excessively, you know you've got something. The reason I think this is a solid test compared to cutting paper the way most people do is that most people cut paper edge to edge with the knife, increasing the overall unit pressure. That's just going to be easier, in fact, It's almost cheating. Cutting into a slightly curved surface of paper on the other hand, generates lower unit pressure and relies on the edge of the knife to generate that pressure. Try it. I have no doubt you'll be able to get it to work and it really is much more impressive a test.
@EdgePro
@EdgePro 5 жыл бұрын
Edmond, I'll have to try that. I remember you telling me about this awhile ago. It sounds like a pretty tough test to pass!
@MrMZaccone
@MrMZaccone 5 жыл бұрын
@@EdgePro Certainly tougher than cutting paper at its edge but not as tough as some things. A good kitchen knife sharpened consistently at 20° or so and finished with the ceramic rod the way Ben has demonstrated can almost always pass it. Have you seen this gadget? edgeonup.com/index.html

Also, the sound it makes cutting the paper is what I pay attention to. If it makes almost no sound, that it crazy sharp. Depending on the blade and the grind of course, but most folders certainly should be sharp enough to cut paper almost silently.

No arm bars or chokes were applied in the making of this video. However, there was some really nice teaching on grips and holds as well as a nice removal technique! Just purchased an Apex and that was one of my first questions... that is, same pressure on both push (leading edge) and pull (trailing edge)? Different pressures? I guess light pressure with the polish tapes and just pull strokes, sure. But otherwise?
@EdgePro
@EdgePro 5 жыл бұрын
Russell, I apply pressure on the push stroke, except when I begin with the polishing tapes, or when using the 2300 or 4000 grit matrix stone. However, I don't think that there is anything "wrong" with doing it one way or the other. I just think PUSH strokes are easier to apply pressure with. I've experimented with doing it both ways - I personally cant tell any difference with the end result. It will get sharp either way.
