Does it matter if you go edge leading or edge following when removing the burr? I have a book that said to increase the angle slightly and always go edge leading. Sorry for the dumb question. Just trying to learn. Thank you!

Yes and no, so to fatigue the burr, edge trailing works best, to flip it back and forth it should pop off doing it gently, however sometimes forward passes can help remove it completely especially if it's stubborn, you don't want to just tare the burr off as it can do microscopic damage you want it to fatigue then pop off, edge leading without edge trailing can tare it off in many cases if the burr is large. Which can cause micro damage if the burr was not fatigued.

The quick answer is that both directions work equally well, and you can keep the same angle as when sharpening. However, increasing the angle is a technique that some use; it’s called a micro-bevel, and it isn’t necessarily “bad” to do. It’s often debated which direction is best-leading to microscopes getting involved and studies being conducted. In the end, whatever is most comfortable for you and allows you to hold the most consistent angle is what will yield the best results. Keep asking questions and putting in work! It pays off. Your question was not stupid in the slightest.

@@NeevesKnives Thank you! I will keep practicing and learning. I can keep a pretty constant angle, however, the burr is where I struggle. I can never seem to cut paper towels without ripping or s cuts in normal paper. I hope to be as good as you one day

@@ianbaker4295 thank you. I have a lot of learning it seems. I can keep a good angle but struggle with the burr. When I can't feel the burr I try the paper towel test to no success. Same with s cuts in regular paper. Practice makes perfect I suppose

@@Sharp.Penguin00It’s possible to still see a burr that you can’t feel! Try inspecting the apex of your edge on a relatively small burr that you can still feel. Checking for small reflections from light is what I usually do; some people use microscopes or magnifying glasses. Jerad addressed the studies I brought up-I prefer edge leading when free-handing and trailing when using a fixed-angle system-the reason I didn’t bring up which is technically the best is that it’s easy to get caught up in small details while learning. Try both ways out and remember what Jerad said about how the burr moves with either technique; it's true and both movements have their virtues.

Lol yeah that's definitely sharper than mine gets, I think it was abused for years and never really sharpened so it's taking some time. It's probably best to start with lower quality knives though and gain the experience.

yes you want to start with something very coarse to get the bevel set and to remove and damages etc
