I have periods where pita is the heart of the dish in my meal, which means that first of all there will be pita and then I will find something to fill it with. With avocado or juicy salad, home-made chicken breast shawarma and roasted onions. No matter what the filling, the main thing is pita.
I wanted airy and soft pitas with a fluffy dough on both sides. In order to get a really airy dough, the dough needs to be highly hydrated. Hydration of dough means the amount of water in the dough in relation to the weight of the flour.
In this recipe, for every 500 grams of flour there is 450 grams of water, which is 90% of the weight of the flour. The dough comes out very (!!) liquid and in the video, you can see how to work with such a liquid dough. Of course, if there is a mixer in the house it can be used, the demo in the video is kneading by hand so that whoever doesn’t have a mixer can also prepare it.
recipe:
500 grams whole wheat flour 80%
(can be found in some countries, it means that 20% of the bran was removed, it is not mixed with white flour. If you can’t find it, mix with 20% white flour/white spelt to reach the total of 500 gram).
7 grams of dry yeast
3 tablespoons brown sugar
4 tablespoons olive oil
12 grams salt
450 grams water
Instructions:
1.Sift the flour into a mixer bowl with a kneading hook or a large bowl if kneading by hands, like I did in the video. Add yeast and mix with a spoon to spread the yeast well in the flour. Add sugar and oil. Begin to mix the dough until the flour absorbs most of the water (the dough still looks like an undefined mess). Add the salt and put the dough for 10 minutes in a mixer or knead by hand. When putting dough in high hydration you can use a guitar hook for the mixer.
The hand-kneading technique for dough with high hydration is called "Slap and Fold". A demonstration of this technique can be seen in the video. It is most convenient to knead such dough on a work surface such as marble or kitchen table.
2. Place the dough in the mixer bowl or transfer from the workplace to a bowl. Cover with cling film and allow the dough to rise until doubled, this takes about an hour to an hour and a half. If the temperature of the room is cold it may take longer.
3. Fold the dough over itself, while in a bowl, in order to expel air. Let the dough rest for 10-15 minutes to rest.
4. Place an inverted oven pan in the top part of the oven, the pan should already be in the oven so it can be very hot when the pitas are placed on it.
Turn on an oven at 250 degrees C (or bake in a fire brick oven at 250-300 degrees C, as shown in the video).
Important point: the pitas need to get into a hot oven so turn the oven on long enough before the stage (6), so that it has time to heat.
5. Moisten a work surface (marble or table) with a little water so that the dough does not stick to the place (optional). Place the dough on the work area. Using a metal peel, divide the dough into equal pieces of 80 grams (for larger pitas, weigh 100 grams).
If the pitas go on one tray into the oven, they should be the same weight in order to bake evenly.
If they are baked in a fire brick oven, each pita will receive full attention so there is no need to be the same size.
6. Shape each piece of dough into a ball, as you can see in the video. You can grease the dough pieces with a little bit of oil so that they do not stick to your hands and peel metal. Press each piece of dough with your fingers and stretch from the edges to flatten them to a thickness of 1 cm. Place on a very floured surface.
7. When the oven is hot, take out the oven tray, carefully it’s hot !! Place the pitas on the tray in such a way that they are spaced (the number of pitas depends on the size of the pan). Quickly return to the upper part of the oven and close the oven door.
8. The pitas will start to swell; it takes about 1.5-3 minutes.
Wait there is a trick!! When baking the pitas on one side, there is a chance that one side of them will come out thin and one side thick, therefore, to get pitas with two puffy sides, they have to be flipped in the middle of the baking.
When the pitas start to swell, open the oven and pull the tray halfway on the rail. Flip the pitas quickly and carefully. Return the tray to its place and close the oven. Bake for another 1.5-3 minutes until the pita swells again.
9. Take out of the oven and transfer to a bowl / pan, cover the pitas with a kitchen towel to keep them moist, this will keep them soft and fluffy.
10. Repeat the process with the rest of the dough.
11. Enjoy a soft and airy temptation, with quality ingredients, delicious wow wow.
12. What is not preyed upon immediately can be frozen for a later date. Thaw as needed.

hi, ive just made these pitta exactly the same as you, but i put them in a normal oven on high, and they was very very good, soft fluffy and tasty, my sauce didnt go so well, but ill keep messing with that, thank you, cant wait for more from you

Hi, nice!!! I bet they were good, well done👏🦋 about the tahini, it may look as if something went wrong when you start mixing with water. Continue mixing and add bit more water slowly..and mix. See what happens ✨🌈

Hi lazy, it is Tahini. It's made out of raw sesame paste. When mixed with water it becomes a yummy thick sauce/paste. Goes well with some lemon, salt, hearbs and olive oil on top 💖🙏🦋
