We bought a 36" camp chef years ago. I wish we saw your videos before then. We smoke beef jerky in bulk, but the edges on the bottom rack burn unless we spin it around halfway through. We use a meat slicer so the pieces are all the same thickness. I'm just wondering if your tall smoker cooks evenly if all of the racks are being used at the same time?

You would still need to spin the jerky. The back is hotter than the front because of the door.
