I can say my mash at about 10 percent has been in a barrel all summer and it still smells fine.

My guess is the apple will be shelf stable for a relatively long time over 10 - 15%, think wine. The cream will last about as long as cream would last at room temperature, maybe slightly longer but not much. I have made shelf stable sipping cream by using a milk substitute that is already shelf stable and had some success with that. Generally, homemade sipping cream does need to be refrigerated. Commercial sipping cream does not contain actual milk, they use "milk ingredients" which is shelf stable, but not the most healthy stuff.
