Kueh Ubi Kayu is also made from grated tapioca like Kueh Bingka, but it is steamed instead of baked. It is served with lightly salted steamed grated coconut.

hi Eddie, greetings for Indonesia! at the end of your video i see that the cake is quite soft, does it will harden once the cake is fully cooled down? or what should i reduce/add if i want to make it a bit denser? thank you in advance :)
@ShiokmanEddie

Hi Josephine, This recipe is meant to be soft but if you want it denser than you can squeeze out the liquid from the grated tapioca. How much I'm not sure as it depends how dense you like.

For your steamed cassava you put less sugar but more liquid in it compared to your baked one. Is there any reason to it?

Serene Seow Sugar amount is personal preference and more liquid is because steamed version texture should be softer than baked ones.

I cant agree more that the amount of liquid is insufficient for 1kg of grated cassava. My own version is very soft and pure white and it hardens to a nice consistency in the fridge. For 300g grated tapoica, i add a boiled hot mixture of 70 g coconut cream, 225g water and 80g sugar
