Kueh Bingka Ubi is made from grated tapioca (cassava) and baked until the top and sides are crispy brown, which is actually the best part of this kueh. Inside it is soft and chewy and together it makes a great texture. This is one of the many Nyonya delicacies of the Peranakans and it goes well with coffee or tea.

Made it for buka puasa just now, oh my.. It is SO GOOD! just as I wanted it to be. The only thing I did different is that I alternate white sugar to brown sugar and give a good splash of vanilla essence. Just right amount of sweetness to me. This recipe is a keeper. Thank you 😍

This looks so good! Can I use frozen grated tapioca? And do you have to squeeze any moisture from the tapioca? Thanks!

Yes you can use frozen grated tapioca but thaw it to room temp before using. No you don't have to squeeze any liquid out.

Thank you for your recipe Eddie. I tried making them yesterday and it was soft and nice. I only made a small portion as I used my leftover tapioca to make it so I baked it in airfryer and it was successful. Will make it again soon!

Can I know if you baked with fan mode. I baked 1st time half recipe it's dense, the 2nd time use full recipe bottom a little wet but it's cooked. Both taste super good. 1st time, I use Kara coconut cream. 2nd time, I grated & juice from fresh coconut.

No, just grate it raw after removing the skin.

Hi.... I try to make your recipe but I’m encountered a problem. I’m bake already 1hr but still middle of my kuih still wet. And the upper layer still not brownies...How? I put baking mode Is’t correct?

It's OK can bake longer until top is brown. It will be soft inside when it's hot. Yes baking mode is correct. Your oven not hot enough. Got thermometer in your oven? Oven dial not accurate.

Can I use glass pan instead? I hve 2 wk ago. Is supple n thinking to bake again. I use normal pan the other day n stick to 4corners and can't remove it. I did use parchment paper too

I'm not sure if glass pan will make the sides brown and crispy as normal metal pan. Use a non stick pan and it'll be easier to remove any parts that get stuck to the corners after baking.

Hello Eddie, I was told that I have to soak the raw tapioca for several hours before I start grating it. Is it true? Also, I have a lot of tapioca. Can I grate and freeze them to bake a second batch? Thank you

I have not soak tapioca for hours before grating and so far ok. Yes you can grate and freeze them and I've done that many times and still turned out good.

Hello, I’ve baked this many times and they always turned out really great! The only thing is they’re thicker cuz I only own an 8x8 square pan, so I was wondering if I should reduce the ingredients? Or maybe transfer some of the batter into a smaller pan? I know this is very subjective as many things may defer such as the tapioca we use, but I thought I should try asking! :)

Yes you can try transferring the excess into a smaller pan. You just need to keep a close watch for each pan as the baking time will be different. Smaller pan will be baked faster.

No it's not sweet but you can reduce according to your taste. Difficult for me to tell how much to reduce because everyone taste is different.

For my oven I baked at lowest rack because the middle rack doesn't brown the bottom of the kueh well.

Not advisable because the heating element is too low in an oven toaster. Inside won't be fully baked. You can experiment with a small portion to test out if you like. Air fryer is doable as others have tried.

I added butter to give a nice flavour to the kueh. You can omit it if you want and also reduce the coconut milk but it won’t have the same richness as what the recipe is intended to be. Your preference.

The name of the stall is "Bibik Spices". It's a corner stall near a clinic. They sell all kinds of vegetables. You need to order and collect later as the seller grates fresh tapioca.
