Hello again, Thank you for your reply. I really appreciate it If I were to have a SM built, would it make any sense to have its bottom made of thicker steel with an opening in the middle with a slide mechanism and a steel box beneath it to sweep the ashes into. I think it could be on tracks so that after sweeping the ashes into it you would dispose of them. This obviously would eliminate the slide out ash tray. But, I am not sure whether it is saving much time. What do you think? By the way, I think your idea of a drain in the SM is a wonderful idea

I think that would be interesting to see and be nice. Personally, I don’t have a problem with the slide out ash pan though. The ash pan is a little heavy but manageable and I wanted it thick to keep the heat off the bottom. If on a budget I might look at extra cooking space or something to enhance the cooking experience vs the cleaning experience. I can literally pull the ash pan out and throw it on the ground and put it back in the cooker in a minute or so. But I do like your idea.

Hello, That is a well designed and thought out trailer. Congratulations. I have a question on the versatility of the offset. After you have smoked a number of times and then grill chicken, burgers, or steaks is any smoke flavor imparted to these?

Steve, you can get plenty of smoke flavor on anything you cook. I won a KCBS backyard event using the cooker as offset. Ribs/chicken thighs/pork butts.

Awesome piece of steel you got there! We must think alike- I just received my Klose 20x48 Grill Chef. It's an offset stick burner smoker with an adjustable height charcoal tray for grilling when you want. The Santa Maria is a nice touch on yours. All the guys on BBQ Brethren forum who own Shirley's love them. I will sub to see some of your cooks on that beauty....have fun!

Love it. You get a little hot spot next to the firebox but I also get that on traditional offsets. You can adjust the damper to wide open or barely open so you can definitely control the temps. I won a KCBS backyard event with it so I am more than satisfied. The versatility is unlike any other cookers I see on the market. Only thing I would do differently is add a drain to the Santa Maria side. However I just put down natural oil dry on the ash pan and that takes care of it.

I’ve cooked a whole hog on it and grand championed a KCBS backyard comp. I think it is practical. For sure.

I just bought my first real grill a humphries vertical. I have seen your other videos with the shirley fabrications. Why do you have so many grills? They are all great but pricey tools.

I had all of the others leading up to this one. All I have left is this Shirley, a Shirley Chargrill, Shirley 24x60, Lonestar Grillz Large IVS, Recteq 700, Original PK, and UDS. I like cooking on all of them. Expensive hobby I guess! LOL

@@korycoleman I have a weber propane and now the reverse smoker vertical. I am selling my pit boss pellet. I would like to have a high charcoal grill to round it out. I have never seen a santa maria grill like yours. Great design with the cover.

I still have the Shirley Chargrill, Shirley 24x60, this Shirley, Lonestar Grillz large IVS, UDS, PK Original, and Recteq 700. I just sold the Shirley vertical since I was getting this one. Huge fan of the verticals.
