Try bing-cherry compote or jam with honey and soy sauce. I work in a Greek restaurant and we just use a neutral oil, salt and oregano with a smidge of garlic, but, years ago, I used the first marinade mentioned, and really liked it.. You have to be aware of the sugar content, though, as it will burn easily. We had metal “racks” made with notches on either side to fit the skewers. The racks were put on the grate over the mesquite charcoal grill. *heaven*

No marjoram? i know you'll say "You can add that if you want too" but sometimes simpler is better and marjoram has limited uses in western cuisine. Thoughts?
