Shoney's Strawberry Pie

My girlfriend Jackie gave me this recipe. I just love that it makes 2 pies! One pie to keep and one pie to share. Easily made gluten free also.
Recipe
1 small box of wild strawberry jello
1 3/4 cup of sugar
4 Tablespoons of cornstarch
2 cups cold water
2 pie crust (prepared)
1pk cool whip
Fresh Strawberries
Stir dry ingredients together in pot (jello, sugar, and cornstarch)
Add 2 cups of cold water into pot with dry mixture; cook on medium heat, WHILE STIRRING until it becomes a thick clear consistency; remove from heat & let cool to room temp. (oops I did not let my filling cool but was fine)
Line pie crust with fresh strawberries and pour pie filling evenly into crusts cool in refrigerator until set
Top with cool whip and fresh strawberries

40 odd years ago, I made the glaze for this wonderful pie! I also made Cole slaw, bean salad, hot Fudge cake & hot Fudge sauce, spaghetti sauce, chili, Blu cheese dressing and ONION RINGS! Wish I could be 100% sure of the recipes to remake these favorites. YEP, I worked in the kitchen of our local Shoney's. But sadly it closed several years ago. Slim-jim sandwich & onion rings😋😍☺ so good! Does any old timer remember the set-up for onion rings? What about fish & chips? "Saute onion" for the liver & onions. Hubby loves them on steak or a hamburger.

You forgot to put the sugar in written recipe. This looks really good! I think it would be prettier to add canned whipped cream (or a dollop of Cool Whip) on each slice when you serve it. I miss the days of going to Shoney's--their Hot Fudge Cake was really good, too!

I worked at Shoney’s in the early 70’s and we always use real whipped cream, never cool whip!
