My girlfriend Jackie gave me this recipe. I just love that it makes 2 pies! One pie to keep and one pie to share. Easily made gluten free also.
Recipe
1 small box of wild strawberry jello
1 3/4 cup of sugar
4 Tablespoons of cornstarch
2 cups cold water
2 pie crust (prepared)
1pk cool whip
Fresh Strawberries
Stir dry ingredients together in pot (jello, sugar, and cornstarch)
Add 2 cups of cold water into pot with dry mixture; cook on medium heat, WHILE STIRRING until it becomes a thick clear consistency; remove from heat & let cool to room temp. (oops I did not let my filling cool but was fine)
Line pie crust with fresh strawberries and pour pie filling evenly into crusts cool in refrigerator until set
Top with cool whip and fresh strawberries
