Don’t go in sections, you’ll change angles throughout the edge. Clean smooth swipes back and forth with light pressure. And emphasis on the strop, you’re gonna have a burr.

You can go in sections if you’re going for a convex edge. The convex edge will probably give him a longer lasting edge because the edge will be more rounded instead of a v shape

This works better for smaller knives and pocket knives not for chefs knives etc. You can see how Burrfection sharpens his gyutos and it is step by step more or less.

Even some professionals sharpen section by section, it’s really just how well you can hold a consistent angle. Professionals can just do this a lot faster and more fluidly, if you’re dulling your knife going section by section then you likely don’t understand the principles behind forming a bur and apexing the edge or don’t have your technique down pat

hey a quick tip from a knife maker, when sharpening knifes, you shoud test the sharpness inmediatly after the coarse stone. if its not sharp, try again on the coarse. becouse going on the less coarse wont make it sharper, only shinyer

It is possible to still sharpen on a finer stone, but you are kinda defeating the purpose of having the coarse stone if you do that, and it will take a painfully long time. Source, I recently bought a 2000 grit ceramic water stone and discovered that despite being not at all the proper stone for reprofiling an edge, it still cuts just as fast as my $30 hardware store coarse stone...

@@brendanolevnik3755 I don't mean to attack you or anything but I find this behaviour gross as hell. For one, we should aspire to perpetuity. The idea of replacing things every couple of years because 'it's plastic, it gets brittle, it gets old, it breaks' is sickening to me. We are so much better than that. Our collective millennia of knowledge and developed skills are laid to waste by today's throwaway culture, just cycling through bullshit pretending life has meaning. For two, these are skills, abilities, things that people should be able to do. If you outsource even the most basic of your necessities to the commercial and capitalist mass, do you really have any value on your own? sure, you might be the finest machinist in the world, and that's glorious, but without the basics, you are still missing a piece, and with your children who are never taught these skills, that missing piece just keeps getting bigger and bigger until a whole facet of people's lives are missing. No matter which nation or group of people you come from, they would not have survived had each member not learned, learned to learn, and utilised. might have gotten a bit too philosophical there Edit: my bad, I sound like a massive bitch at the beginning of this one

It shouldn’t take more than 10 minutes to sharpen unless there are chips in the blade. A good trick to check if you’re maintaining the correct angle is to run a sharpie on each side of the edge. The sharpie will get worn off quickly if you’re at the right angle.

@@MikeBoyd always always lift I believe, as when you push forwards you’re likely to mess up your burr, which you correct for when doing the other side. By rocking he means you changing the angle of the sharpening as you move, so the spine of the blade getting closer and further from the stone which changes the angle of your edge, so can also try to do in one full motion to keep it consistent :) but listen to the OP as I may be wrong

@@MikeBoyd going back and forth is totally fine, if you are skilled enough. For beginners it can happen that you get cought on some groove or accidentally change your angle too high and actually dull the blade more than you sharpen it.

@@MikeBoyd Yes. You are only supposed to sharpen the knife one way. You push the knife edge down, and you should also flip the knife over and sharpen the other side (which is the only time you should cut towards yourself).

Also ‘stropping’ with a piece of raw (dry) leather does wonders to the final sharpness, super easy just drag backwards on any scrap bit of raw leather (not the sealed/waxed side) and it will get rid of any small imperfections

@@littlefrank90 just search “stropping a knife” on KZbin, I’m sure there will be loads, I came across it on knife building videos and happened to find an old scrap piece of leather from a laptop bag handle lying around the house, does the job fantastically. The main tip is just to always drag backwards so you don’t cut into the leather :)

There's also different compounds you can put on the leather to get a finer edge. The smaller the micron the finer the grit (1 micron

Whet = “to sharpen” or “to hone” Also, the reason it isn’t too sharp is because of two things: 1. Your angle isn’t consistent enough. 2. You didn’t strop the knife.

@@yammarques that’s not necessarily true. The angle varies by knife/maker, so you don’t want to sharpen at some constant angle, but rather at whatever angle your knife was manufactured at (or is currently at).

I'm glad you're knife got sharper, but you're technique could definitely be improved :) I hope people won't use this as a reference on how to sharpen knives 🙈 A few tips to improve your technique: - Do not go in sections like this. You will have uneven borders between the sections and not take off the same amount of steel in each section. Instead you go over the entire blade in a slightly curved motion. - Always swap the side of the blade after every streak to ensure that you are taking off the same amount of steel from both sides and you don't end up with a lopsided blade. - Don't move the blade back and forth orthogonal to the blade. You should _never_ pull the blade over the stone in the "backwards" direction. Instead, you always move the blade "into" the whetstone. This might seem a bit counter intuitive at first, but you have to think of the edge of the blade and that you want to take bits of metal off the blade. If you move backwards you push the metal to the edge and you end up with a rough edge that might be a bit sharper for the moment because of all the little "hooks" that you form but it will get dull very quickly. Instead if you really want to sharpen the edge you need to pull the metal away from the edge which you do by moving the blade into the stone (at a flat angle, and in a cruved motion to get the whole blade even). I hope the explanation makes sense. This is easier to explain with a knife in hand and a drawing board. - To summarise: you keep a constant angle between the blade and the stone. Then you start at the tip, blade facing forward, moving forward over the stone (which "drags " the metal away from the edge). You do this on a slight curve until you reach the back of the blade. Then you lift the knife. Flip it (so that the other side of the edge is now on the stone) and repeat the same motion. now it will be from left to right instead of right to left, but still forward - you NEVER pull the knife back. Keeping the angle at which you hold the knife constant will take a bit of practice. This way, it might also take a bit more patience until it is properly sharp, because you don't generate a "rough" edge (kind of like a mini serated knife) that will temporarily feel better than a dull edge, but ultimately doesn't improve the blade - but what an improved technique you will instead produce a properly sharp edge, which will last you very long. I hope this helps your knife sharpening endeavours! P.s. I know these things from a professional knife sharpening course that I took, so I hope that this information should be reliable.

I think on a soft whet stone, moving forwards can cause the blade to bite in on occasion... Your technique works extremely well on oil stones though.

May be an unpopular opinion but I think sharpening and honing is perfectly fine for kitchen knives. Even sushi chefs and doctors simply hone their knives/scalpels before use, from my understanding. Honing will keep your knife sharp throughout the majority of it's use and then you can sharpen it every 6-24months depending on usage.

The coarse side is way too coarse. You should typically start with a stone around 800 unless you have a lot of material to grind off and serious reshaping

@@Birdnerd1968 the “coarse side” is 240 though which is extremely abrasive compared to most stones but of course grit can be subjective so whatever cheap amazon stone he’s using probably isn’t comparable. Most stones that low in grit are used for complete re-profiling

You should get/ make a strop from a leather belt, a few quick passes after using the whetstone and the knife will be quite a bit sharper.

Sharpening knives is relaxing and pleasing to me. Have been doing it for a while now. Once you practice and learn it is very easy and it amazes me how few people know how to do this. See people tossing perfectly good knives and tools away rather than sharpening them.

True, but you still shouldn't use the stone dry. I always heard you use an oil made for this, never seen actual water used so dunno how well that works

@@arkvoodleofthesacredcrotch6060 Oil stones are slightly different and much less common. Apparently they remove material less quickly, but they also last longer. Most whetstones are water stones.

I sharpen mine regularly now. I got into it a few years ago and I do friends knives too and families sets at Christmas. Sharpen my work set at minimum 3 weeks usually 2 times a month. Keeps them in great shape and I look forward to it now

Agree it's an art. The best way to learn is to line up a ton of really dull knives and pocket knives. Even cheap yard sale ones to practice on. Use KZbin videos to learn and just do it. The more you practice the better feel you have for it. It's a good skill to have for sure.

@@thunderlord3183 bro sharpen your knives I promise you there’s no downside with sharper knives you won’t have to push as hard to cut, onions won’t smell as bad when cutting them cause your cutting the cell wall instead of crushing it, your less likely to injure yourself because you have more control while cutting, and lastly it just makes prep work a lot faster

My original whetstone came with a little like 15-20° angled block that helped me learn to hold the knife at a consistent angle. I don't use it anymore, but I hiiiiighly recommend using something like that if you're just starting out. Learn the technique and muscle memory before rawdogging it.

Be carefull. There are two kinds of whetstones. Those for water and those for mineral oil. Some stones can be used with either but ... Once a stone touched oil, it can never be used with water again. So, if you plan to use any stone with oil, be careful to mark them and store them appropriately. Some stones are designed to be used dry. Also, some stones are dsigned for specific types of knives. In particular, ceramic knives require specific stones. In short : always check compatibility and read user guides ...

@@JohSmith its possible. I waw taught how to do it, and for some time it worked for me. It s handy to boost sleeping when you need to sleep at an exotic time, or change your habits, or have a nap after lunch. You can also program yourself for a sleep duration. It's obviously incompatible with controlled dreams. But some aaspects are common between both methods. In short, it's based in breathing control and consciousness of your body. Focusing consciousness on specific parts of your body in a specific order can either make you sleep, or wake you up.

I got one lesson from my grandpa when I was young on sharpening knifes, it's easy to learn difficult to master. Holding that angle perfect not even a degree of movement is still hard even after 20 years of occasional practice they do have tools for that though that help you hold the angle for those with weaker hands or certain disabilities.

Might also be patternwelded steel instead of Damascus as they tend to look the same/really similar and are often mistaken for eachother

I once read a book on sharpening. For kitchen knives it recommends using a coarser stone then stropping with chromium oxide. This leaves a microscopically serated edge with all the highs polished. It cuts easy on a chop like a normal knife but when you slice at all it’s effortless. Really works well and doesn’t require a whole lot of fuss. I sharpen and strop a blade in a minute on a bench grinder(with upgraded stones). Fully polished edges I reserve for fine chisels and things for cutting wood or metal.

My dad sharpens knives everyday and he's really good at keeping them sharp and restoring them, but he never taught me! When I was a kid I was too young, as a pre-teen I wasn't interested, and now at 17 I'm begging him to teach me. Specially after using dull knives (having used sharpened knives my whole life), I need to know!!

Sharp is when a hair from your head cuts itself under the pressure of its own weight against the blade. Anything less than is close, but not the genuine article.

You should also be stropping the blade with a leather strap. This brings the metal fibers back in alignment after you break them down on the whetstone

When I found out about leather strops, I was amazed that more people didn’t talk about leather strops then they do wet stones. Whetstones are really just for creating new cutting edges, or when you are changing the angle of the cutting edge, you just mostly use a strop to polish and make it razor sharp. People seem to forget that for simple maintenance strops are the best product unless you get nicks in your blades whetstone is the way to go then use a leather strop

While strops are great tools, and fantastic for maintaining an edge, an experienced sharpener shouldn't rely on one to deburr, your edges should shave arm hair off the stone, ideally. If you're a beginner, or utilitarian (only sharpens for sharp tools, doesn't enjoy the process), then I do understand the reliance on the strop.

My grandma has a knife she has been using for over 20 years and never has had to sharpen it and is still sharper than a freshly sharpened knife. It's also been used so much and so long that there is a curve in the knife where she uses it the most from where it's been self sharpening all these years

The factor edge can be really good for some knives and will last pretty long especially if the knife steel is basically designed to not be sharpened. Knives that are made of even slightly reasonable quality need more consistent care. Plus if you only use the knife a couple times per week it might not dull quickly. My two knives are daily workers for dinner so they get plenty of use.

With the whetstone u can put some water in the middle then grab the knife and go in tiny circles where u put the water it's suppose to make it sharper

Don't forget to flatten the stone every once in a while. This can be done by just putting a sheet of 800 grit sandpaper flat on the table and then sand it down until the entire surface of the stone is one uniform color.

Get a dimond stone with 15 degree guides and a leather strop for best sharpness. Also a ceramic rod for quick jobs would be good as well

Good that you learned it. Use it more often and you get the swing and a feeling. If you get through this you want a leather strop to polish the edge a bit (but it works without, too). Sharpen your knife and use a hone (in germany we call it Wetzstahl) every time you blade feels a bit dull. It straightens the bent edge up and your blade is ready to go.

You'll get a sharper edge and better edge retention doing straight passes, though the level of difference it makes is quite literally splitting hairs.

You can purchase small tools to help you set the correct angle when sharpening. You also want to do long smooth strokes over the entire blade in one stroke.

800 grit is pretty magical. Remove a lot of material and also reasonable sharpening. I like hogging out a hollow grind in my knives so I can use a 10k grit stone for a razor edge in seconds.

It's called whet due to an old way of saying it with an h than without. In older documents/smithing journals it used to mean something to remove, to delete, to forget (As far as I remember)
