As always, great stuff. I know I need to dive a little deeper on shoyu, but hadn't thought much about mirin. I've got some solid brands I always go back to, but stretching out and trying things can lead to really cool new tastes

found out about your channel via reddit, I've recently picked up making ramen as a semi-hobby and it gets me really enthusiastic. I'm (trying to make) it about three to four times a week now, setting myself little challenges such as "cook a bowl with whatever is at home" and it's really educational, and videos like yours help out a lot too!

It depends on what you have infused. If your aroma elements were refrigerated before cooking, probably best to keep your aroma oil in the fridge until serving
