Shredded tofu with taro over rice

Making a shredded tofu with taro topping over rice today which is an ode to a traditional Vietnamese shredded pork. This can typically be found in a broken rice dish and I just love the play on texture here.
Also, something different to do with taro since folks loved that taro dessert we did the other week! 🙏🏼
