This is a Creole gumbo. My family is Creole and this resembles our gumbo without a roux. The roux is more a Cajun gumbo thing. I love that you said that the original gumbos didn’t have a roux because that is true and people have lost knowledge of our origins. Not to knock the new stuff, roux gumbo is delicious as well. I researched that the roux was introduced by a flour company, hoping to increase sales, in the 1920’s. Their slogan was something like what is gumbo without a roux from white lily. I think that’s the flour company. Wonderful!! Wonderful!

thanks for the history about the introduction of roux by a flour company. thats interesting! the original gumbo being made w/out makes sense b/c wheat was not common in Africa at that time. so it would not have been a first choice when enslaved africans were brought to america.

I haven't been able to find any link, where cajuns contributed anything notable to gumbo. Gumbo is creole. The cajuns just learned to make it, from the creole. Then culturally, they were given recognition for it, bypassing Haitin's influence on practically everything we consider to be "cajun"

It's not shrimp and okra gumbo, it's Shrimp gumbo! Fun fact, it's not gumbo without okra, it's just stew! The word gumbo means okra, the dish comes from West Africa and okra is pronounced "Ki ngombo" which is where the word gumbo came from! So how can you gumbo which is okra stew but don't have okra, I know you have it in yours but a lot of people don't and it's not gumbo, and if you have to call your shrimp gumbo "shrimp and okra gumbo" you must not know gumbo is okra stew 🍲 it should always have okra to technically be gumbo and if it doesn't then it's not gumbo!!!

I’m a Cajun and you’re right about some flipping over the tomatoes. Tomatoes in gumbo is sacrilege here. I grew up without them but added them myself in later years. I like the flavor and the acid helps cuts the slime from the okra. The only other thing that you did differently than I would have is the addition of the bay leaf and leaving the vegetables chunky. We would normally cook all the vegetables (including the okra) until they break apart completely. Sometimes, as Cajuns, we watch these videos in utterly bemused horror at what some folks think gumbo is. I must say, though, that all in all you really did do a great job!

i agree that the tomatoes pair well with okra. I have done it where I add the okra first and it cooks down completey. but i realized I liked them to still be whole. however, since they are from frozen and I also pan fried them first, they are incredibly soft.

@@CamirrasKitchen Everyone does gumbo just a little different. It’s an art, not an exact science. Yes, they get so soft that they disintegrate as soon as you put them in your mouth and press them with your tongue. No chewing required… LOL

@googies ~ I too am cajun and was taught a slightly different way of making okra gumbo. Frying down the sliced okra first (with a lil vinegar to cut the slime) is how I make mine. Once it disintegrates that forms the ‘roux’. Then add whatever you buy or have on hand: seafood or chicken & sausage or all three, season well & add water or stock (& of course tomatoes😬 if it suits your taste [haha]). Now, I like her suggestion of buying whole okra then slicing. Might try that. I’ve seen some folk add sliced okra to Roux gumbo and it’s good as well. Definitely add file’ once ‘cooked’ but never while cooking and never to okra gumbo. To each their own. Good eating 🥣

@@grammyj17988 Yes, I grew up eating it the way you describe using vinegar to cut the slime. Nothing wrong with it that way. I just like the tomatoes… and yes, the okra becomes a thicker in place of a roux. Filé goes on when it’s in the bowl and never in okra gumbo, as you said.

Rue for sure is authentic. But also it can be made w/out it. I typically choose not to use too much rue b/c I want to keep the flour content down. But rue taste great lol

traditionally, gumbo file would be used in the winter when okra wasnt available as a thickner. however, if you like the flavor you can feel free to add it to your bowl when serving. i use file when i make a roux based gumbo just for flavor, but it does thicken as well

Gumbo looks good but no Africans created gumbo . Gullahgeechee are the orginators of orkra gumbo 😋 and they were indigenous to america they are considered the sea island creek people . Our ancestors didn't start off as slaves . Respect to ancestors and their culture and land 🪶 🏹
