Akua, Stir frying requires very high heat and the cooking typically is a collection of multiple ingredients that cook compatibly faster, while retaining freshness and crunch. Sautéing requires medium high heat and the cooking time is not usually as brief, also in sautés, the ingredients are typically cut in to small or bite size pieces and requires a comparatively sizable amount of fat. Hope that helps.

I love the video. Please what is the difference BTW leeks and scallions? Is scallion same as spring onion? Pls if I have two cups of uncooked rice, how many cups will it give me when cooked?

Leeks and scallions both have a mild onion flavor, however, leeks have a woodier texture and are great for developing broths and cooking dishes that are more robust, whereas scallions a great for garnishing.
