I grew up working at Chinese family restaurants. Shrimp with lobster sauce was one of the most visually appealing dishes. You can sliced bamboo shoots and sliced water chestnuts for a bit of texture contrast.

As a new subscriber I have two questions please: (1) Recipes call for "soy sauce" and "dark soy sauce". Is the "soy sauce" regular and not the "light soy"? I "think" there's a difference. (2) You call for beef and show images of a large cut but make no mention of what the actual cut it is (maybe chuck). Please let us know. Thanks so much!

Light soy is very salty, dark soy is more to add colour to a dish and isn't as salty I hope that helps ,that's why they will say 2 tlbp light 1tlbp dark and usually 1 tlbp oyster sauce 😊

Have you guys been to a Chinese restaurant ordered a "lobster contonese" dish? This "shrimp with lobster sauce" is identical to that except there's no lobster, only shrimp. 😂

I don't think the black beans are what North Americans would think about. I think the 'black beans' are really fermented soy beans. Actual black beans would be used in Mexican cuisine, and the crop would be native to the Americas, not China. There is a famous canned fish, and the canned fish would have 'black beans' but in reality, if you look at the ingredients list, you will see that the 'black beans' are really soy beans--fermented soy beans. And the chicken broth is unsalted. In American grocery stores, regular chicken broth and low-sodium chicken broth are usually sold, but it may be possible to purchase no-salt chicken broth online these days and have that stuff shipped. Of course, a person can always take home a whole chicken and separate the meat from the bones and then use the bones to make broth. NO sodium broth. The old-fashioned way.

Delicious! Thank you so much. As I am a pescatarian vegetarian (shellfish, shrimp, crayfish and clams/oysters and eggs are OK), I used vegetable broth and plant-based ground beef. It turned out to be absolutely delicious over white rice. Again, thank you from a new subscriber from the very rural Virginia Piedmont.🌿❤️🕊️🥂
