what is the Alternative of 178ml or 3/4 cup Cream ???????

Thanks for watching. Here are a couple cream alternatives: - melted butter and milk (1/4 butter and 3/4 milk) - soy milk and olive oil (2/3 soy milk and 1/3 olive oil) If you make it let us know how it turns out 👍😊

This is Allemande sauce from a veloute sauce. Veloute is just butter, flour and chicken stock.

Yes you are right a basic veloute is butter flour and stock. You are also correct about when you add egg yolks to the veloute it is an allemand. This recipe is slightly different with the addition of both cream and yolks. It is a more complex version of a veloute. I find it to be a smoother silkier sauce.
