And are there any types of gold or silver (coins or jewelry) that don't like to collect even as a dealer? Those of us who are new in the space worry about trying to store value in silver or gold, in a form that may be difficult to redeem for cash later.

Gold factional coins have a higher premium. In my opinion gold should be your non liquid legacy stash and silver your liquid.
