Hi John! Actually, it is better to use the egg white from a boiled egg because most of the hydrogen sulfide forms there. Hydrogen sulfide is the stuff that patinates. (Harold McGee's 2004 book : On Food and Cooking - The Science and Lore of the Kitchen). I also tested this out egg whites vs egg yolk etc on my blog, and McGee is right!

Thank you for sharing this information. I never went to culinary school. And, I never did any research on eggs. I learned to use the yolks for patination from other jewelers. Thank you for providing the OJA with the scientific information on the correct use of eggs for this purpose. Thanks for your support! : )
