I tried it and it tasted pretty good. I even kept the second batch to ferment for 7-8hrs and the texture was even better. Try it!

No need to sprinkle water all the time. Only before the first dosa to make sure that pan is hot enough. Greasing pan is required for each time.

We use whole Black URAD dal with skin, whole chana & whole moong and Toor dal. The rice used is parboiled rice. The ideal combination with Adai is Aviyal curry

When you add urad dal you need to cook on both sides of the dosae. This is basics. Everyone who make video have changed traditional cooking methods .

You are right. But we can cook either way 1. flipping method 2. cover and cook. Here I chose 2nd methos cover and cook. By covering the dosa, steam helps cook the top side without needing to flip, and after removing the lid roast more for extra crispiness😊.
