Thanks so much! It can be made with lots of different citrus fruits, too. Might need to adjust sugar levels for particularly astringent fruit.

Lemon is one of my favourites. Never been the biggest fan of sweet, but tart! Oh, yes. Lemon and raspberry is a little slice of heaven for me.

That's awesome! Yes, it works very well with many different kinds of citrus. We like things that are very tart, so lemons, Valencia oranges, kumquats, limes, and that sort of thing.

Most of the recipes we've ever used are yolk only, but we sort of liked the texture of this one that used the whole egg. I do love lemon curd! Nice and tart!

I make a version for a local restaurant which (scaled to the size of this recipe) would be 2 whole eggs and 3 yolks... Based on those proportions, I suppose you could substitute three yolks for each egg used in the recipe -- e.g. make this recipe using 9 yolks instead of three eggs. The resultant curd will be softer; we actually found that we wanted stiffer curd, once we were constructing the parfaits. That said, I wouldn't adjust the recipe if I made it again, but I might attempt to cook it a little bit further.

That should be fine! You might need to let it warm up a little after being in the fridge, because it will set up a bit when it's cold.

I keep seeing these. But everyone doesn’t do 1 thing I’d suggest. Double boiler. Remove the possibility of breaking or burning you end product. And butter off the heat when it’s done.

I thought lemon curd was a spread like marmalade that you could spread on bread or toast, I see you call it lemon curd custard.

IT's really the same thing. Orange or lemon curd is traditionally used as a spread for scones as an alternative to jams and jellies, or as fillings for pastries. It's also the base of desserts like lemon meringue pies!

It comes out decently stiff, really. As noted in the recipe, if you want a stiffer curd, you can increase the amount of egg whites, or reduce the amount of butter used.
