This video is a change of pace from videos directly about the garden. In this video I share one of our favorite recipes for turning fresh fruit into a fantastic dessert! We lovingly call this “Stick-O-Butter” Cobbler. Traditionally, we used fresh dewberries which use to be commonly found around our neighborhood. However, as more and more of the land has been developed, dewberries have become increasingly harder to find without having to drive father out into the country. My solution to this is to grow blackberries in the Grey Ghost Garden.
This recipe comes from my mother-in-law and has been handed down through her family for generations. It is rooted in rural, German-Texan, country style cooking. Simple ingredients, easy to prepare and delicious…especially when topped with a scoop of vanilla ice cream!!!
Here is the recipe:
Fresh or frozen (thawed) berries 1 1/2 to 2 Cups
You can use about any kind of fruit you want, including peaches, apples, blueberries, blackberries, dewberries, cherries, or strawberries. Don’t be afraid to use this recipe as a base and then customize as you like.
1 Stick of Unsalted Butter
1 Cup Sugar + more for sugaring the fruit
1 Cup Flour
1 Teaspoon Baking Powder
1 Egg
1/2 Cup of Milk
I add the following ingredients:
1/2 Teaspoon of Salt
Dash or splash of Vanilla
Directions:
1. Wash berries/fruit if picked from the garden. Then coat them with sugar. How much is up to your taste.
2. Preheat oven to 350 degrees Fahrenheit.
3. Place entire stick of butter into cobbler dish and melt completely in oven once it has come to temperature.
4. While butter is melting, mix sugar, flour, baking powder, egg and milk (salt and vanilla as well if you are going to add them) in a bowl.
5. Once butter has melted, carefully remove from oven, add cobbler batter and then add fruit. Fruit will mostly sink to bottom of cobbler as it cooks.
6. Return cobbler to oven and bake for 30 minutes at 350 F.
7. After 30 minutes, check center of cobbler. If still loose, cook for an additional 5-10 minutes. (The juicier the fruit, the more likely it will require additional cook time)
8. Remove from oven and allow to cool for 10-15 minutes. Serve alone or with a scoop of vanilla ice cream or whipped cream on top. ENJOY!
