I first encountered this magnificent soup whilst holidaying on Crete way back when. It bowled me over, pardon the pun, and I couldn't wait to go home and cook it for myself. It's been, or bean even, a firm favourite ever since. Lots of garlic is the key.

I love this. Cooking for yourself as when you live in an apartment with roommates is rarely actually cost effective. This is cheap, doesn’t make me overstock ingredients, takes less than an hour, uses one pot, stores in the fridge, and makes 6 meals for a tall guy. It still tastes good with water instead of stock, and if I’m missing some of the herbs it’s not a dealbreaker. 10/10

Definitely a keeper. Even my 12 year old grandson loved it. Added potatoes and used kale as I didn’t have spinach. Sprinkled Parmesan cheese on top… so good 😊

Oh my goodness, this tasted fantastic! It reminded me of the soups my late mother used to make. I put in a lot more oil and garlic than the recipe called for, and more spices. And lots of parmesan cheese. I also used onion salt and then put a few drops of tabasco sauce. 😋

I just made this (forgot the spinach) with butter beans and leeks instead of onions I gotta say, its one of the best things I've ever tasted! IT WAS DELICIOUS! I almost ate the whole thing, had to stop myself, lol. Thank you for the recipe.. Simple but FULL of flavour. Its gonna be a staple! :)

I just found you and I'm living all the soup recipes. I've been taking a hell day where I instant pot beans, portion into freezer bags, and then I have a salt free substitute for canned beans. I call it hell day because I make 6 big batches to cover all the different beans I typically use, so it's an all day bean day but worth it in the long run

I usually use almost the same recipe to make white bean and kale soup. You do have to cook the kale a bit longer than spinach. The upside is that the kale holds up to reheating better than spinach. It would also work with any green, such as escarole, chard, etc.

You can make vegan parmesan with cashew nuts and garlic powder just pulse in a coffee grinder it’s delicious as well. When I used to be vegan I got the recipe from Mimi Kirk . Use it on Caesar salad too chef kisses

Looks delish! Next time - I recommend adding vegan chorizo (I recommend Upton's brand chorizo) for that authentic Spanish al Andaluz taste! Or just regular chorizo...or spicy Bosnian sujuk if you have pork restrictions!

Nice recipe and good video. One tip I will give you is switch out the white salt for pink Himalayan salt. Pink Himalayan salt has a lot of minerals which are healthy for you. But anyways great video.

Easy with everything I had in the fridge and pantry. I keep homemade veg stock in the freezer. However, mine did not thicken up like the one demonstrated so I was a little disappointed in how thin it was. I did break up the beans but it didn't help thicken it.

I'm a med girl we have a similar dish except no carrots celery spinach. We also just use boiled water and spices we place in after its cooked. We call it kuru fasulye and if you want you can add meat at the beginning

Do you grate your own parmesan cheese or get it already grated? I like real cheese in my food. But we are eating a bit more healthier and we don't eat meat except for fish now. Its been a few weeks since we last ate chicken or any other kind of meat besides the hamburger we had at the oakland zoo. Other then that we don't eat meat anymore but just fish. Thanks for showing this recipe. I can't wait to try out all of the soups you have that are without meat during this coming winter.

Yes it is! What I usually do is boil water with vegetable scraps like the outside layers of onions, carrots and celery in addition to any herbs I have on hand fresh or dry. Make sure to add salt and let it cook for one hour. Then you can drain it and you've got homemade vegetable broth!
