I made this for my son's birthday cake, (it's his favourite) and it was perfect! Thanks! I used your cream cheese icing recipe (in the link) for the top too. The only additions I made was adding some crushed walnuts (about 1/4 cup) in the cake, added twice as much cinnamon & touch more cardamom & after generously icing the top (I didn't use all the icing so you easily halve the recipe and it'd still be plenty) with the fluffy gorgeous icing I sort of peaked the top (in a very rustic way just dabbing it with a spatula) I sprinkled the zest of a lemon & a sprinkle of crushed walnuts on top. Oh, and I added a little lemon zest within the icing mixture too. It was a winner. It was so delicious!😻🍋🥕

I made this cake today & used extra virgin olive because that's what I had and it worked out beautiful! You could probably use any vegetable oil you have, and it would be great. Very delicious cake recipe. I recommend the cream cheese icing recipe too! ☺
