We love them roasted too but carmelized in a cast iron pan in some bacon grease with some syrup!!! Can't eat enough of them

To happy you're enjoying them. Waterbath is definitely faster way to do things - but always follow the rules. You can't waterbath everything.

I so wish we had a farmers market like that in our area. My husband is in that area frequently for work so I told him next time he's up there I need him to go to that market and rent a car to come home instead of flying so he can bring me lots of produce 😂

@@1870s can you elaborate on how you caramelize them? This is completely different for me with brussel sprouts. I either roast them or boil them. I prefer boiled. I truly love b.s. and eat them often.

Gee Rachel, i cant seem to watch a video of yours without coming back at you with a question. I had no idea anyone cooked their pickled items after pickling them! Can I ask how you would use them in a meal...would you roast them? chuck them into a casserole meal? how vinegary do they taste when you do that? is it a taste you have to 'acquire'? Does recooking them/heating them up 'soften' the pickle flavour?

I used 2/3 kosher salt and Himalayan salt and thought they turned out well. What changes with pickling salt?

I've heard but don't know how true it is, so I hope you can answer for me. I was told if you take the first 2 layers off the sprouts they won't be bitter, is this true?

I noticed you placed competed jars in pot to reboil them. Is that last stage necessary? I made a couple of jars of jalapeno with same brine mixture and it lasted a year without it goin off. (The brine being a preservative yes?)

That's called Open kettle canning: involves heating the food to boiling, pouring it into the jars, applying lids, and allowing the heat of the jar to cause the lid to seal. Many years ago, it was commonly used for pickles, jams and jellies, and sometimes used for tomatoes and applesauce. We don't really use that method, because the USDA doesn't really consider it safe.

ok its me again... can I can the frozen things... lol SO! do you see any reason I can't pickled the bags of frozen Brussel sprouts in my freezer? Even if the texture is a tad softer it would free up space and I love the idea of having yet another lovely veggie to present when the power goes out in winter. our favorite is roasted but my hubby would love another way to eat Brussel Sprouts!!!

You said it takes a long time to pressure can them... Just how long does it take to pressure can them? We pickled some too for the first time this year. We added all kinds of spices to the mix.

I just meant in general pressure canning takes longer, I honestly didn't even consider it or research a process for pressure canning brussel sprouts

I'm sure you can just pressure can them in water, as you would carrots or green beans.

There are tons of bacteria in sinks. Almost as much as a toilet. It's sickening. So skip "cleaning" or soaking them in the sink. It's gross. Just get a bowl or plastic tub to do it in instead.
