As a very strict food critic, I gave my hubby a big thumbs up for this recipe. I think you will like it too. It's surprisingly easy to make. Try it yourself and have a taste of it. Let us know if you like our recipe. Refer below for the recipe. By the way, we have amended the recipe slightly because Roland didn't use a measuring cup when he was filming this video. It revised the amount said as they differ from what he actually used as seen in the video. The recipe below is a more accurate version of his recipe.

Ingredients
------
900g - 1kg whole chicken. Fresh recommended
Stuffing in cavity of chicken:
1 thumb size ginger
2 stalks of spring onion
4-5 cloves of garlic
Colour coating before cooking:
3 tablespoons of premium dark soya sauce (low sodium)
For Gravy / Braise for Chicken
2 cinnamon bark
20g rock sugar
6 cloves
1 star anise
1/2 cup premium dark soya sauce (low sodium)
4 tablespoons Chinese rice wine
2 tablespoons light soya sauce
8 cups of water

i tried your recipe agn ...this time i used the pressure cooker to cook ...only 12 mins...so succulent! Forget to tell u ..i used chicken whole leg. Wonderful!!!

I tried this recipe but added an additional step at the end of roasting in the oven to crisp up the skin. I also cooked down the remaining liquid to use as a dipping sauce. It was delicious.

I love this chicken! Did not know how to prepare it but you made it look so simple hat I am going to try it! Thank you very much for the recipe! Your cat is so cute! Would love to see more of him/her in future videos! Your dog also! I have 2 cats from Idaho but I did have 13 cats I brought over from Singapore many years ago! Thanks! I also brought 5 stray dogs from Singapore! No way was I going to leave them behind! The afternoon paper which I can't remember wrote about it - I think it was around April of 1993! They are sadly all gone now and I have 2 cats and 3 dogs, all rescues from here! I got them from Idaho and now I am living near San Francisco Nd brought them along whether they liked it or not! I love your videos! As a Singaporean ( Eurasian) now living here ( have to with an ang mo father) but I love my Singapore food the best and eT rice every day! I am powered by rice! Cannot be without it! Keep doing your videos as many people love seeing them! My cousin in Vancouver loves watching too and we talk about them!

+norm lor Good morning from Singapore! We didn't actually use the pressure cooker function to cook this chicken even though were using a pressure cooker. This pot was in the right size to cook this chicken so we used it. Sorry for confusing you 🤓🤓🤓

Hello, looking at the comments here, you mentioned I could use drumstick instead of a whole chicken. Just wondering, what do I do with the spring onion, garlic & ginger that you put into the chicken cavity? Can I just put it into the mixed sauce instead? How long do I braise the chicken then? +MegaKaraokefan Hihi. You can add the spring onion, garlic and ginger in the gravy. Once your gravy is boiling, add the drumsticks and spring onion, garlic and ginger - boil for 10 mins and turn off the fire. Leave the chicken in the gravy for another 30 mins before digging in. Enjoy!

Yes. In fact you can use the same marinade that has already been used to make the first chicken. Just smear some dark soy sauce on the second chicken first (just like the first one) before you cook it. Hope this helps. Happy cooking!

Hihi. We didn’t use a pressure cooker. The pot we used in the video is indeed a pressure cooker but we didn’t activate it. We just used it like a regular pot because we don’t have another pot in similar size. You can just follow the exact timing per the video. Happy cooking!

For how long can you keep the braising sauce? And is the braising sauce the same sauce topped over rice in hawker stalls? Thanks and good day chef!

Hi Gooner P. Yes you can use the braising sauce as gravy over rice or noodles or even porridge. If you like it to be thicker, you can thicken it with cornflour or tapioca flour. As for how long can you keep them, let the braising liquid cool down to room temp then keep them in container/s. You can freeze it. This way, you can keep it for as long as you want. Hope this helps.

Hi Roland, for the braising stew, do we measure saltiness based on how salty we want the chicken to taste or should it be less/more salty than the actual desired taste?

Wil wil, are you referring to rock sugar? There is no rock salt used in this braised chicken. I think just a normal salt will do. 😊

Hi. Is it possible to roast the chicken in the oven to make it crispy after boiling it?

Hihi. Yes it’s possible but it would be best if you can air-dry the chicken before putting it in the oven otherwise the chicken won’t be crispy. As the marinate contains sugar, the chicken might be burnt easily so please don’t turn the temperature up too high. Perhaps 180-190C is good enough. If you think the chicken is burning up, quickly adjust the temperature downwards. Hi Gre. You can use 1 teaspoon of it. Mix with a little water to make it into paste first before adding to the braising liquid. Happy cooking!

Wow, i'll try that chicken recipe, it's not that hard I guess. I think slicing and plating the chicken is more complicated. Btw, the sound of the bird reminded me of Singapore. This probably be in Sg. I miss the place.

How do u wash the chicken? Do u lightly rinse it or salt rub then wash off before cooking. Or just pat dry from ntuc

+Anna Kunwong Hi Anna. We used a 900g - 1kg chicken. Cooked it for 15 mins on high heat then turn off the flame and leave the chicken in the gravy for another 45 mins. If you’re using a bigger chicken, then increase cooking time to 20 mins on high heat and then turn off the flame and leave the chicken in the gravy for another 45 mins. Hope this clarifies. Hi Athea. The method I shared in the video is normal pot. I didn’t activate pressure cooking at all in the video. Hope this helps. Happy cooking!

Yes, I strain and freeze it in glass jar. And re-use only a couple more times.

Can I ask, the cup that was used for the recipe. How much does 1 cup mean? Is it the standard measuring cap? 1 cup equivalent to 16 tablespoons?

+Paul Ling Hihi. Our 1 cup is 250ml. However as you can see from the video, Roland estimated how much dark soya sauce he added (1/2 cup) which may not be exactly accurate. In our newer videos, we started to use measuring cups so that we can give you precise measurements. You can add 1/2 cup to the recipe first. If after tasting it, you feel the dish needs more dark soya sauce, feel free to add more to suit your taste. We hope to make a new video using the same recipe but with exact measurements soon. Looks delish! What if I have a 2kg chicken? Do I double the marinade amount ? What about cooking : braise time? More than 45 mins? Always have this fear the chicken won’t be cooked.

Hi I tried your soya chicken but it is quite bland. Is it the sauce is not salty enough? Should I soak the chicken in the soya sauce overnight and boil the next day to make to more tasty?

Hihi. Sorry to hear that the chicken turned out too bland for you. You can add more soya sauce and salt to flavour up the chicken. We have tried this recipe multiple times and it turned out flavourful for us. Many of our viewers also achieved the same result. Perhaps your pot was bigger than ours and more water was added. You don’t have to soak the chicken in the sauce overnight. We used the exact same method showed by Roland and the chicken turned out great.

What if you're not using a pressure cooker? How much time should you cook the chicken?

Hi Jeff. You don’t have to use pressure cooker at all because the cooking time is very short. The important part is to keep the chicken soaked in the gravy for a period of time with the fire on. Hope this helps.
