Tried your super tender chicken ginger scallion recipe for my family dinner tonight. SIMPLY DELECIOUS ! After prep chicken from bowl to plate, I keep in the refrigerator for 2-3hrs. Chill the chicken down like a cold-cut dish. I add some sesame oil to enhance the taste.

I ran out of sesame oil. In desperation, I used the ones that come with instant noodles! Guess what. The dish still turned out phenomenal. What a great recipe. Easy to make, too!

Thank you again and again, everytime I watch your cooking. After my mom and my dad passed away a few years ago. I had no one showed me and give me advice about cooking Chinese food and Chinese culture anymore, that so close and understood absolutely. Although there are some others Chinese cooking showed, but most of them speaking Mandarin Chinese and have different styles. I speak Chaojow. Your program speaking English, at least I could understand very well. But the most important is your teaching method that I really like. Reminds me as a daughter of Chinese parents and their foods with our cultures. Thanks again. 😊👍🙏❤

I can't remember since when Roland has become my go to "look for recipe" chef whenever I wanted to cook something. So here it is! I prepared this for my family lunch today & it was a hit! The chicken is so tender and juicy. The sauce was better than store bought. 1st time I found it too salty and so I redo it again by reducing the soya sauce to 2.5 Tbsp, add the chicken stock & increase the sugar a little to our liking. My mom and husband requested me to cook this at least twice a week. Thank you so much Roland & Jamie. ❤😊

In Thailand it's called chicken and ginger made with ginger, oyster sauce, golden mountain sauce and palm sugar. Served on bed of jasmine rice. I'll try this as well sense I love ginger in cooking.

Always hesitant to make 'bak cham kai' because need to cook whole chicken and it's a bit of a challenge to finish with just 2 person but this recipe is just right for portioning. Oh do make garlic chilli vinegar sauce to go with this dish. It's OH SO GOOD

This seems great cooking option for general boiled chicken. I normally make 口水鶏, 棒棒鶏, and of course 海南鶏飯 with homemade boiled chicken. I will try this version as soon as possible.

Simple physics: my tip is to season the ice water as well at least with some salt, better also with some ginger and scallions. Keyword here is osmotic pressure. You will lose less flavour in the meat. Just my 2 cents.... other than that a great recipe, I have been eating and enjoying his dish many times in SE asia all around KL & Singapore. Subscribed !

I just made this. The sauce was a tad salty. It could be my brand of soy sauce. I’ll probably choose low sodium soy sauce next time. I also followed your chicken rice recipe and cooked with the stock from the boiled chicken instead. Texture was perfect but slightly bland. However with the scallion sauce it was just perfect. The family enjoyed it. Thx Roland.

Reduce 5 tabs to 2 or 3 spoons add some hot water with a little sugar accord to ur taste.
