I love my pyalas and pyalis! Makes food taste even better! Homemade masala is so much better tastier than store bought. Nothing seems to compare!

how important is the star anise and the nutmeg?

You can leave out the star anise if you don’t have it. The nutmeg however, does add to the flavor of the pulao. If you can’t source it, it’s still fine but it will take away from the flavor of the pulao.

@@SBLtasteoffiji I made it and it was good...except it was a little bitter. What do you think I did wrong? Also, I added powdered nutmeg separately and didn't have star anise.

Sounds like the spices might have burned… that can cause bitterness.

It happens! Next time, just lower the flame to the lowest setting next time. You can slowly roast it without fear of burning 🥰
