POTATO SOUP
2 to 2.5 lbs gold or Russet potatoes
14.5 oz can chicken broth
8 oz block of cream cheese
1 Tbsp dehydrated minced onion
1/2 tsp salt
1/2 tsp granulated garlic powder
1/4 tsp smoked paprika
1/4 tsp black pepper
4.5-quart Crockpot or slow cooker
garnish with bacon, cheese, sour cream, and chives
BROCCOLI CHEESE SOUP
1 lb broccoli florets
1 Tbsp cooking oil
1 small shallot
3 cloves garlic
4 Tbsp unsalted butter
1/4 cup all-purpose flour
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp smoked paprika
1/4 tsp black pepper
(3) 14.5 oz cans of chicken broth
1 cup heavy cream
12 oz cheddar cheese
1/2 cup parmesan cheese
salt to taste
BEEF VEGETABLE SOUP
1 lb lean ground beef
4 small to medium potatoes
10 oz bag mixed vegetables
3 (14.5 oz) cans of beef broth
15 oz can of crushed tomatoes
1/2 small onion
1 celery stick
1 dried bay leaf
salt and pepper to taste
CORNBREAD Ingredients
1 pkg Jiffy cornbread mix
1 large egg
1/3 cup to 1/2 cup buttermilk
2 Tbsp chopped pickled jalapeños
4 to 6 oz cheddar cheese of your choice
2 Tbsp softened butter for baking pan
ITALIAN WEDDING SOUP
MEATBALLS
8 oz lean ground beef
2 Tbsp plain bread crumbs
2 Tbsp grated parmesan cheese
1 Tbsp chopped Italian parsley
1 Tbsp minced onion
1 clove of minced garlic
1 large egg (add 1 Tbsp to beef, reserve rest)
1/4 tsp salt
1/4 tsp black pepper
