I was thinking about what I should have for dinner,I took out ground beef ,but I didn't know what I wanted to do with it. I knew that I had 2 old elpaso enchiladas for chicken,n then I I found tortillas and I thought burritos,n looked for a recipe to see if I had all of the ingredients, n then I saw you and the meal that you made for your grandmother,, and I'm so happy that I did.

Sat down for a cuppa tea this morning and turned on KZbin and came across one of your videos and I loved it! So I subscribed and went to your channel and I have been watching your videos for the 2 last hours!🤣. You’re so down to earth I feel like I could be sitting in your kitchen with you talking, explaining how to do this! I’m a single older person who loves to cook and loves good food! But first of all that’s lovely that you take care of your older family! That’s not as common as it should be! My all-time favorite Mexican food is chiles rellenos! I haven’t made them in a while, but after watching this when I go to the store, I definitely will get the poblano peppers to make this again! And I make taquitos all the time, but I have never made potato ones! One thing I do every time I cook if I can, which is great for single people. As I always make extra and freeze it if they’re freezable this way, I have a quick meal down the road I don’t feel like cooking! I know the potato taquitos should freeze. OK I’m not sure about the chiles rellenos, I’ll try one and see!

I love Mexican food. I visited my friend (my other friend travelled with me) in Mexico for 3 weeks. I learned to love Mango anything (ice cream). I had so much fun. I remember the mountain that made me car sick visiting her grandparents. She had a big family (just like mine). I remember waiving good-bye. I haven't been to El Vaquerro in a while.

Your grandmother had the queen treatment!!! Awesome! I never knew that was Piccadillo! I thought it was made with corned beef. I’m not Latina, but I make a version that my taught me that Mom showed me but we put leftovers of any vegetables in it. We just varied if we wanted broth or no broth. Filling and comforting!! I never knew how to make that homemade salsa/enchilada sauce! I’m going to try it!!! Craving breakfast nowwww❤I want Champurrado, too!!!

I had chilaquiles every morning in Playa Del Carmen, Mexico and I have not been able to come anywhere close to the simple flavor. I can't believe how good it was with simple black beans and egg on the side. All the recipes just say use salsa, but the dried peppers must be the key!! Can't wait to try!

My mom use to make something she called sopitas de tortillas. I'm not sure if it's an actual recipe or one of her concoctions. She'd fry up some cut up tortillas until very crispy then she'd add some diced onions and tomatoes, no peppers whatsoever. Once the onions were mostly softened she sprinkle some Kraft Parmesan cheese. She'd serve it along with some over easy eggs...so good. Cheers
