Today, I am making Mexican rice easy and delicious. This is better than restaurant-style rice, and the secret is utilizing V8 juice in place of tomato sauce. There are so many ways to make Mexican rice. This is just another method of making homemade Mexican rice.

INGREDIENTS
1 to 1 1/2 Tbsp cooking oil
1 cup long grain rice (rinsed)
1/3 small onion sliced
2 cloves garlic minced
1/2 tsp cumin seeds
1/4 tsp black peppercorns
1 Tbsp tomato chicken bouillon powder
5.5 fl oz can of V8 juice (or just use tomato sauce)
2 cups water
pan with a lid

Just wanted to thank you for this recipe. I made my own adjustments but the end result was amazing. My wife said it was the best Mexican rice she has ever had. That says something when she is very picky. I was almost in tears. I used a powder version of the bouillon cubes as the store didn't have the actual cubes. I used two tbsp's haha. I also used red onions and jalapeno chopped. In the end it just came out wonderful. Thank you so much for making my wife's day.

My father was from Zacatecas, Mexico..And my mom made really tasty rice her and grandmas way..they were great cooks. My father put sliced banana on his rice..I used to frown upon it, until I tried it..I loved the taste! I miss my parents, and this added taste brought me wonderful childhood memories. Maybe it's the way people from Mexico add their touch. Lol

My dad is from Dominican Republic and my mom Puerto Rican. Fried eggs with rice and beans and a side salad was a staple dinner. Add in some platanos and that was gold!!

Wow, I would never think to use V8 in the rice, but it looks good! My favorite way to eat Mexican rice is the way my husband's Grandma makes it. She blends all the tomato, garlic, and consomate in the molcajete, and puts pieces of onion in it while it cooks. She always fries it in lard instead of oil too. It's a lot work blending the tomato with the molcajete but it's super flavorful that way, and then it has tiny chunks of tomato and whole pieces of onion in it. So good.

I had left over pintos and taco meat from when we had taco salad so I decided to make burritos for supper tonight. I made the pintos refried and I've always wanted to know how to make Spanish rice. Especially with V-8. I had a can of hot and spicy v-8. I decided I was gonna attempt this. I didn't have any onions so I used bell pepper and fresh jalapeños. Omg. This is the best rice. And it came out perfect. Literally. Like I eat with my eyes as they say. The rice was fluffy and beautiful. Thank you so much for sharing this video.

I never thought I’d be cooking Mexican Rice with V-8 juice. Grandma Barela would be laughing at me and calling me Crazy! I sure miss that Silly old Grandma. No one Cooked food like her. Grandma B was from Las Cruces New Mexico and boy could that little Old Mexican Grandma could cook. My Favs where her Chilaquiles. Grandma made them with cut up white corn tortillas lightly fried in the oil and slathered with Red, or Green New Mexico Chilis. Hatch to be exact. She would fry and egg on top of the cotija cheese and Crema sauce. Okay..now I’m drooling! Love all your recipes. Thank you for sharing your Gift with us🙏🏼❤️

I instantly fell in love with you when you mentioned eating Mexican rice with a fried egg on top and hot sauce. Hahahaha. My top comfort food for sure. For extra decadence I fry homemade bacon and chorizo sausage and sauté the rice in that oil, daaaaaaamn. Add the bacon and chorizo back in when you add the liquids, maybe a bit of sweetcorn for a (sort of) vegetable. Don’t bother forking it, it’s gone in five minutes at my house. Hahaha. Great video.

OK, I have not created this recipe yet, though here is our problem. We love Mexican rice....GREAT Mexican rice!!! Since moving to Illinois from the west coast, well, food in general has become bland. We recently visited a restaurant in Lafayette, IN with the most amazing food!!! The single item that amazed us most, was the Mexican Rice...not bland!!! It had flavor...seriously flavor!!!!! We are now in love with Mexican rice! I can't wait to try your's.

When I make this rice I sauté the onion first in butter then add the rice till it’s golden, instead of V8 I use Clamato juice. Just wanted to share, it’s so good! Enjoyed your video!
