You literally put a tear in my eyes. I've not seen anyone else besides my dear mama make enchiladas this way...she's long passed. I've been to many restaurants hoping to find enchiladas made this way, but no luck. They all drown the enchiladas in sauce...thank you for sharing!😢

My husband loves Mexican food. I never had a chance to be taught how to cook Mexican from my mother or family, they disowned me when I came out to them 35 yrs ago. After almost 30 yrs in Europe, I recently am rediscovering my heritage and culture and especially the food. You’re now my Mexican cooking mother and abuelita… I've become the only Mexican that serves this beautiful food while speaking French to my friends and new family here. Thank you for being there.

Natalie, I feel the same way. It is such a shame that children grow up without grandparents, because the grandparents have more to offer children because they have so much experience and have learned their short comings in the process of raising children.

The best thing I have learned from this channel are the many variations of different salsas, enchiladas, burritos, tacos, etc. It gave me the freedom to put my own spin on these recipes, without fearing it might not be "authentic". My family thanks me, but really, we all thank you for sharing!

I love this version...I like to lightly toast my chilies first then just soak in boiled water, and also semi sweet chocolate added at the end makes the flavor so yummy and intense.Lovely demonstration of how to cook and fold the enchiladas, thanks for sharing!! I love the history and pics🤗.

I had forgotten, my abuelita would fry the enchiladas the next day. I preferred day 2 enchiladas nice and crunchy. Thanks for the memories

Absolutely, the next best way to serve enchiladas, pan fried. I do them for breakfast. I place the fried enchiladas on a bed of shredded cheese. As they are melting that cheese I fry up two eggs over easy then I place them on top of the enchiladas; sided with refried beans and fried potatoes, breakfast is served 🤠🇺🇸

i think my grandpa sent me this video from above because he just died from covid and he did all the cooking for his sweet wife,my abuela Sophie, even the enchiladas he'd made this way. i miss my grandpa. Ever since I was a little girl, my mom would add ground beef as the filling and cheese as the topping. Then a friend of mine gave me a plate of hers with just cheese and onion and I was so shocked. My mom told me that the traditional enchiladas are only filled with cheese and onion. However, my moms family was so poor and couldn’t afford cheese so it was just onion and she grew to hate onions and stopped using them when she came to the US.

This is essentially how I cook my enchiladas as well. My MIL taught me using ancho chilles; I now combine guajillo(?) and ancho. I also fry a diced potato/carrot mixture to put on the finished product, fried in the same skillet the enchiladas were fried in.

I think learning how our grandparents prepared things is so important. We can learn so much about the culture. My grandmother did not enjoy cooking so there wasn't much to pass on but she gave me so much love that there isn't a void. Thank you for sharing.

The salsa was pretty interesting. One of the best salsa’s I ever had was made by a guy I worked with, when he made chicken tacos for lunch. He just put some tomatillos, onion, jalapeño, and garlic on a plate. Covered it with plastic wrap and microwaved them to cook and steam them at once. Then put them in a blender with some cilantro and a dash of salt. It was so good. He bought a rotisserie chicken from the grocery store, very succulent and perfect for tacos. That quick and simple meal was some of the best tacos I ever had.

I have always struggled with these. I now realize I had the heat to high...I just need your patience and lower the heat. I love this style of enchiladas. I know it gets messy with the chile popping in the oil. Thank you for sharing your abuelito's pictures.

Fantastic! Now that my two girls are grown, my husband and I try lots of different cooking. We love enchiladas and tamales the best. No picky eaters makes it easier. Hubby does a mean salsa and his Mexican food recipes are good but he is obsessed with cooking healthy. He makes a fat free tamales and its pretty good. But I am so making this simple recipe!!! I am going to ad onion peas and tiny cubed potatoes! But I love working with the dried peppers. I am going to make everything in this video. Add chicken to his. ILOVE YOUR CHANNEL! I have made several of your recipe. I am currently making a cookbook for my two daughters. My husband is a book binder. So he has made two beautiful books with velvet and let her, 100% !cotton linen paper and styled to look 18th century. They are filled with my recipes along with memories hand written. But I am adding your recipes in there. So they can pass them down to their children! Thanks so much!

I prefer this method of doing the enchiladas because it does not involve frying the tortillas. Your grand parents make a lovely couple both in their young age pictures and now. Thank you for sharing the recipes and memories.

Amazing flavor and texture! I made these tonight and both my wife and I love them! I used shredded chicken dark meat with Monterey Jack cheese. Wow, such flavor. This reminds me of my childhood in the California Bay Area in a city that was predominantly Latino. I was often invited to indulge in the best tasting food ever - and the bonus was I learned how to cook it. Thank you so much for sharing this recipe.

regional cuisine, the different ways to prepare food go with the region. In the north of mexico, Zacatecas, Durango, Chihuahua, they fry the tortilla first and then dip it in the enchilada sauce after. The Chile rellenos in Durango never go with a salsa over them and use Poblano peppers all the time so a deviation from that is unusual to people from that region. Tamales are different in almost every state, sometimes from family to family. My aunt on my dad's side always made sweet tamales with pineapple, raisins, and coconut but my mom's side of the family didn't care for them or never made them. It's nice to have all of these different takes on the most of common Mexican dishes. I like all variations and like to try new ways and flavors, it's all good.

Aww your abuelitos are so cute. I'm almost 30 and have only ever had one grandpa alive since I was born and to this day he is in 90s and is just about to have another birthday. Haven't seen him since this all started so watching you see yours made me tear up. Also these enchiladas looked amazing I think ill make them tonight for my family we had a tough weekend so they deserve something delicious

This is cool! Yours is the only recipe I've seen where a tiny person like me could feasibly make the sauce ahead of time & not be committed to a full batch by baking them. I could fry up one or two. Thanks for sharing your technique & a little family history with us. :)

I own many Mexican or New Mexican cookbooks and NONE ever show an enchilada made this way. Recently came home from Santa Fe and couldn't figure out why my enchiladas never taste like the restaurant, now they do! So happy I found this technique. I bought your cookbook from Amazon.......can't wait to try the corn tortillas with the cornstarch......mine rarely puff up.

Wonderful recipe. I love that you have a nice voice. You are simply and eloquently teaching us, not trying to be a comedian. The recipe is not too complicated or expensive. I've often wondered if this style of cooking enchiladas was born from cooking on a discada, all the splattering wouldn't matter as much when you're cooking outdoors.

This is the traditional way. My mother's family is Mexican and this is how I grew up watching enchiladas made and assembled. Casserole style is more of a tex-mex thing and don't even get me started on chili as a topping sauce (yuck)or flour tortillas being used. Lol!
