I love this... I've always pressed gently with a tortilla handmade wood press to cook my tortillas so they are completely cooked and not left looking to white and not cooked. When you leave them without pressing / cooking them they look like uncooked masa. When I first got married my maid from Mexico gifted me a flat iron grill plate with handle, sized for two burners to cook tortillas and the wood presser made in Mexico. She taught me to make tortillas. This was the Best gift I've ever gotten, Ever!

Cool! We stopped eating fast "food" decades ago, eating only organic. I make us the double-decker tacos at home. yum! Much better flavor. These Frito burritos look great. I found organic corn chips that taste the way the fritos used to before they went frankencorn and changed the recipe. The only difference I would make to this would be adding some refries to the filling. ;D Mexican rice (from your cookbook but with beef bone broth and org beef bouillon), refried beans and cheese is already a favorite here. Adding the taco meat & corn chips? Extra yummy. Thank you!
