Tortang Talong with Giniling, SIMPOL!

Check out this delicious and oh so simpol eggplant omelette with ground pork! Perfect with banana catsup, right?
INGREDIENTS:
Set A:
2 tablespoons Golden Fiesta Palm Oil
2 cloves garlic, minced
1 piece small onion, chopped
1 piece tomato, diced
1 cup ground pork
1 tablespoon soy sauce (optional)
Ground Black Pepper, to taste
Salt, to taste
Set B:
4 raw eggs, beaten
3 tablespoons cornstarch in ¼ cup water
1/2 teaspoon salt
¼ teaspoon ground black pepper
Set C:
2 pieces large eggplants, grilled and peeled
Oil, as needed

Perfect! I had leftover Torta and a gigantic Talong=no need to combine 2 Talongs. The boss said "make Tortang Talong" with the huge talong and I was thinking of cutting it in circles like in some YT vids. This solved my dilemma.

Thank you chef. Problema ko sa tortang talong when i cook it, its always watery inside way too much moisture in the eggplant itself. May naka advice sakin ipa dry muna sa araw para mawalan ang moisture pag e luto na. Tama ba yon?
