HOW TO MAKE SIMPOL HOMEMADE LUNCHEON MEAT
Join #ChefTatung as he shares a homemade version of a #Simpol #LuncheonMeat!
Make your own luncheon meat at home and skip the lines at the grocery, and even save yourself some cash and extra pounds while at it. Preparing your own versions of canned goods ensures that what you’re serving your family is safe and healthy. Stuff slices into sandwiches or pair with garlic fried rice! Let’s start cooking #SimpolHomemadeLuncheonMeat
INGREDIENTS
1/2 kilo ground pork
4 tablespoons fish sauce
1 tablespoon sugar
1/2 teaspoon pink salt or prague powder
1 teaspoon white pepper
4 tablespoons cornstarch
1/4 cup ice cold water
cooking oil, for frying

Chef! Nakita ko po ito kahapon. Ground chicken (walang ground pork sa ref.), cured overnight --- very SPAM like. Salamat po.

The ingredients are easy to find but be keen to the freshness of the meat . You can be creative in adding add ons such as cheese or even add Italian seasoning to make it tasty or even add chili flakes to make it spicy. The best part it's home made and has no unfamiliar preservatives that you see in most brands. Pwede Kya ito chef sa ground beef Chef. Thanks for this breakthrough recipe that everyone can follow.

As far as I know, when you apply pink salt #1 (Prague Powder #1), you need to let the meat rest for at least 12 hours so the nitrite will turn to nitric oxide (safe to eat, kills bacteria that causes botulism). If you cook/steam the meat too soon, like less than 12 hours, the nitrites will turn into nitrosamine -- a highly carcinogenic substance.

Chef, instead of nitrite/pink salt for coloring, pwede kaya gamitin ang beet powder? Ang lakas makakulay na pula ang beet powder. I use it for cooking as well as in a henna mix for my hair (to enhance the redness). Beet powder is healthy and can be easily found here in CA. Thanks for the vid -- I'm thinking of making this using beet powder. I'll update you.
