Any substitute for cooking wine?

Cooking wine just adds complexity to the taste. Not an absolute must. You can try white wine , or rice wine. If you use sweet wine like japanese mirin, then reduce sugar because mirin is quite sweet. id rather not use mirin. Otherwise, cooking wine is a skippable ingredient.
