Mom's suggestion, use the oil that used to fry the crab to fry the aromatics. The crab's sweet juice already in the frying oil.

Marion you should totally try smth called creamy butter crab! Its a really popular flavour now in singapore and is made with butter, evaporated milk, sugar, curry leaves and chillies. The result is a buttery sweet lovely sauce that’s sooo yummy its my current favourite maybe even temporarily topping the chilli crab!!

I have watched several videos featuring crab in various sauces, and they look delicious. Your salted egg and black pepper sauces are easy to prepare. Someday I have to get some crabs and try this for myself. Chili crab too.

Yep. Chili Crab is definitely the OG Singaporean crab dish! Maybe Marion can show how to cook it and eat it with the mantou.

Chilli crab is not the favourite in Singapore. Most Singaporeans I know prefer the black pepper crab.

Hi Marion. I love your recipes and these crabs look so yummy! For the salted egg crab, what would be a possible alternative to evaporated milk if one is lactose intolerant, to still achieve a similar taste?

You could make your own evaporated milk with lactaid free milk.

Yes, you can. Fry the fish with flour, so that it's crispy and crackly. We do this for our fish too.

I think I've seen pakaged salted egg yolks in the frozen section of Asian groceries here in Melbourne. So you don't need to buy the salted duck eggs to cook and peel them.

They’re not as good though. The texture is more waxy as they’ve had stuff added like preservatives etc. Best results are from the actual salted eggs like Marion showed.

I think shrimp would be the best substitute as you kind of need a big of bulk in my opinion rather than just crab meat

Can you skip the deep oil frying first and just toss the raw crab together with the gravy? I think it’s healthier that way

Hawker centers are where you’ll find all the cuisine under one roof. Skip the fancy restaurants and get down to support local small hawkers😊

Yes. You suck on the shells. Then break shells for the meat and dunk the meat in the more sauce on the plate. That’s how it’s done and it’s divine.
