All that food looked wonderful, too, but I'd want real char siu in my noodles because I'm a good little Irishman at heart who's all about the piggy. I'm especially a sucker for char siu, of course. I used to have roti prata and the kaya butter bread toast for breakfast when I was a boy. Missed them. The half boiled eggs I don't eat. Nice breakfast options in Singapore. Many Singaporeans have them. The difference is that they used to cost less back in the 80s. Roti pratas were like 30 cents for plain and 60cents for with egg.

When you think that roti is just flour and water cooked in a shedload of ghee... The roti stuffed with cheese and mushroom is more a murtabak. Roti with just telur (egg), bawang (onion), or bawang putih (garlic) is sublime. For western backpackers, some places add sweet fillings like pisang (banana), honey, Nutella, strawberry jam, and so on. Bullet coffee, with the spoon of butter in it, is great. The coffee itself is strong and the sweetened condensed milk slurry in the bottom of the glass mug gives you a caffeine and sugar rush to last the morning of traipsing about in the Singaporean and Malaysian heat and humidity. Malay coffee has a hint of coconut to it as traditionally the Chinese who made it couldn't afford a proper coffee roaster, so they "roasted" the beans in a hot wok with a little coconut oil. I'm addicted to the stuff to the point of buying the sachets of 3-in-1 premixt to drink here in Australia. Dip your toast in the egg and/or season the egg with soy sauce and white pepper is pretty much what everyone does. The mock char siew pork, if there are no real pig products in any of their other dishes, will make the stall available for Muslims to eat there as well as vegetarians. Smart move.

Saying its a Malaysian food is not wrong..just because it can be found in other places..just as someone says Hainan chicken rice is a Singapore food..they're not wrong...lol..or even Chilli crab..like you cannot get hainan chicken rice or chilli crab anywhere else?...see?
@knightshade909

@@gilchong9083 ermm what do you mean that you cannot get Hainan chicken rice anywhere else when there is there is famous Hainan chicken rice in Malacca and it is in Malaysia? Are you discounting that too? Unless, you are saying that is not chicken rice.

parathas are usually available at asian grocery stores. make sure you put the packet in the freezer when you get home otherwise it's a little difficult to handle when time comes to preparing. to prepare, just remove from freezer, then take 1 piece and fry on pan. turns out quite true and legit compared to the hawker made ones.

recipe for "kaya" aka "coconut jam" is extremely simple and basic. you're basically making custard. all you need are eggs, sugar, coconut milk (with as high coconut cream content as you can get) and optionally a little butter for a finishing gloss and a few slivers of almonds (or even some sunflower seeds) if you like. 1) put your eggs in a double boiler (slightly more yolks than white is probably best) 2) add half the number of tablespoons of sugar as the total number of eggs (or as much or as little sugar as you like) 3) continuously stir the mixture till all sugar dissolved and mixture turns a little brown due to caramelization (thus sugar content cannot be too low) 4) add coconut milk and keep stirring 5) mixture done when mixture coats the back of the ladle and you can get a distinct line when you run your finger across the ladle. 6) add the optional little bit of butter to give the finished product some shine and the almond slivers and you're done. if you end up of scrambled eggs and/or coconut milk separates into oil, you've overdone the cooking. enjoy by spreading on generously buttered bread (toasted or otherwise) keeps in fridge for a week or two.
