As a Filipino guy who started living and studying in Singapore since I was 18, I'm so happy to see two cuisines I love the most coming together. Big fan of Meatmen channel as well. The title Same same but different is so Singaporean I love it!!!!

My family's pansit bihon is cooked more like Jon's xing zhou mi fen. Soak the noodles. Stir fry all the aromatics and veg and separate it. Stir fry all the protein and separate it. Cook the noodles and add the veg and protein once the noodles have absorbed the all water.

My family cook it like erwans and it tastes superior in my humble opinion 😂 but without chicken liver we only cook it with chicken liver if we have leftover chicken liver adobo

If you pre-soak the noodles in water, it only taste as good as when soaked in the broth.

By just watching this video you can really tell how flavourful erwan version but since the people I'm cooking can't eat salty and don't want the over cooked noodles so I used to cook similar to SG version

I love my bihon with more veggies like sayote, green beans, snowpeas, cauliflower, brocolli, mushroom, green onions/scallions, practically the pinoy chopsuey veggies 😁

The flavor of the Singapore beehoon comes from the wok hey (the char flavor from super hot wok). Most versions of it doesn’t even have vegetables or meat- super plain lang kaya akala mo walang lasa. Very different sa nakagisnan nating pancit bihon, but it’s also super delicious. Love the title of the series btw!

We always prepare pancit bihon whenever there's celebration at home like birthdays and other special occasions. It's actually our Filipino comfort food.

WE tend to steam our bihon more, so it comes out dry but very tasty. We know that the noodles is already cooked, but we keep it in the wok for maybe 15 to 20 minutes more in low heat, covered. then we put in the vegetables and take the pancit from the wok, or else the vegetables can overcook.

When i worked in SG i missed our pancit, now that i'm back here in PH i kinda miss their bee hoon, char kway teow, laksa, hor fun and all!!! I miss SG food!!!

I lived in SG for 9.5 years and it’s there that I had more access to different cuisines in the world. For noodles using vermicelli, my favorite would be the Chap Chae I used to buy in the Plaza Singapura B1, matched with bulgogi. I find Singaporean Xing Zhou Mee sweeter and I was not used to that taste in bee hoon dish. My favorite noodle dish is the Hokkien Prawn Mee I used to buy in Food Republic. Whenever my family and friends come to visit, I introduce them with it, and Marché.

The way I cooked my Pancit Bihon is much like John than Erwan's way. But sometimes I soaked it in water but tap water will do or sometimes directly to the saucepan like with Erwan. I just sauté the garlic and onions then add the meat (pork, chicken breast, liver) then season with fish sauce and soysauce add the vegies then add water or broth add the bihon pre-soaked or directly then cooked until the water is absorved. Thats it, so simple. Hehe. Been to SG for a couple of times but this is the 1st time I heard that there is a Singaporean Cuisine same as our Pancit Bihon, nxt time I'll try it cause I think it taste as our Pancit Bihon. Sometimes also I put sliced fried eggs on my version of Pancit Bihon. Hehe

I learned already how to cooked singaprean bihon recipe...but a lot of times i cooked filipino style and my boss singaporean and their family they love it...every saturday or sunday thats is our lunch .

Now I understand why fried bee hoon tend to be dry in hawker center. Vermicelli is one of my go to food whenever it is available in hawker due to its strong resemblance to pancit bihon. Both taste good. Shiok liao!

I hope to see more of this collab. Anyway, My family’s pancit recipe soaks the bihon in water. We use chicken/ pork stock. We also use chicken liver like you do. Sorry, no to Chinese chorizo & oyster sauce haha.

As a filipino Chinese I’m not actually surprise by the similarities of both country because yeah the descendants of the filipinos came from mainland china then to taiwan then to the Philippines and since the pre-colonial era Chinese merchants from fujian and guangdong influence the native filipinos especially through garments, foods and etc. till today many chinese from southeast of china migrated to the Philippines so I’m not surprise to have similar things with countries that is singapore and malaysia.

Personally, my favorite Asian noodle dish is extra spicy shrimp/prawn Mei Fun. Hmmm...and Pad Thai. Ummmm and Lo Mein...ahhh and pancit...and ramen...you know what? I think it's safe to say I like ALL Asian noodle dishes, lol.

"Chinese chorizo" (more properly Chorizo de Macao) is not really Chinese. They're just called that way because they resemble the flavors of Chinese cuisine. In particular the use of anise for the sausage.

When I need to cook pansit bihon fast I actually presoak bihon on hot water while prepping the other ingredients.
