Wow, looks so delicious, Sing Sing. Got to try your recipe, especially since i m from Singapore. By the way, this Singapore Noodles dish is NOT readily available in Singapore, u will be surprised to hear! Only in zhi char stalls, not in our standard food courts n hawker centres. It's been years since i ate it. I have a slightly different recipe from yours but i will give yours a try! Thanks!

Since my American girl friend asked me to translate for her, here is my English translation: Prep work: A. Soak the rice vermicelli. Heat up water. Then put the rice vermicelli into the hot water. Spread out the rice vermicelli. After the rice vermicelli has softened (not soggy), turn off the heat. Drain the water and place the rice vermicelli in a sifter. Place a piece of cloth on the rice vermicelli to keep the heat and let the rice vermicelli soak up all the moisture. Rice vermicelli should be bouncy, not soggy. B. Ingredients: 2 eggs sliced BBQ pork sliced green pepper sliced red pepper sliced green pinion sliced onion Chopped yellow chives a handful of bean spout Cleaned shrimp 1/4 tsp tumeric powder 1/4 tsp curry sauce (Lee Kum Kee or any other brand). Just a little bit to make the dish slightly spicy but not too spicy. Steps: (Chef said that you must follow the steps to get the best results.) 1. Brown the rice vermicelli on both sides a little bit. The purpose is to keep the rice vermicelli dry and to release the aroma of the rice vermicelli. 2. Stir fry shrimp with high heat 3. Stir fry eggs, bean spout, BBQ pork, onion, pepper,…. (Just follow his order.) 4. Add tumeric powder & curry sauce 5. Add rice vermicelli 6. Slowly mix all ingredients together 7. Add 1/4 tsp salt 8. Add 1 tsp soy sauce 9. Stir everything together 10. Turn off heat 11. Add shrimp. You need to add shrimp after turning off heat b/c shrimp will release water when heated. You want to keep the rice vermicelli dry.)

Thank you, Chef! The only word I understood was the BBQ pork. Without reading the description, I guessed the noodles were either rice or mung bean. After adding salt, I thought I heard rice wine, then, I thought light soy sauce, based on learning the term the day before. Thank you for putting the ingredients and steps in the description area. It may be worth spending the next several years learning the language to understand what is said in the 11 1/5 minute video.
